Hoping you
will enjoy and
use some of the
recipes I will he
giving each
month. They
have all been
tested by me in
my home, and
will come from
many sources.
I hex are easy family food that
teenagers and parents will enjoy.
For a quick and easy supper this
chicken hash takes only 20 minutes
and you probably have most of the
ingredients in the fridge or freezer.
CHICKEN HASH
4 siices of bacon, diced
1 tb>p. oil. I onion diced
2 gallic cloves, minced
2 cups diced cooked chicken
1 I/2 cups diced cooked potatoes
l/2 cup each frozen peas, frozen
corn
2 ibsp. chopped parsley
2 tbsp butter
4 eggs, fried
4 halves, toasted English muffins
In a large skillet, crisp cook the
bacon in the oil, add the onion and
garlic and cook 3-4 minutes until
tender: draw off fat if necessary. Add
potatoes, peas, corn and chicken.
I leal through gently.
Meanwhile toast split English
muffins, and cook eggs until whites
are set. Place two muffins on each
warmed plate. Pile on l/4 of the
chicken hash and top each serving
with an egg.
You can omit the eggs if desired,
but when the yolk breaks it acts as a
bit of sauce for this delicious hash.
Sprinkle with the parsley and enjoy.
CLEMENTINE TARTS
14-16 baked 3" tart shells
Clementine cream filling:
'2 egg yolks
l cup milk
l/3 cup sugar
3 tbsp. Hour
I/4 cup clementine juice
1/2 tsp. finely grated clementine
rind
1 tbsp, butter
I tbsp, orange liqueur (optional)
1 tsp. vanilla
In a heavy saucepan whisk
together egg yolks, milk, sugar, a
tpinch of salt. Blend in Hour and
bring to simmer over medium heat,
w'hisking constantly, until thickened
and smooth. Blend in juice and rind.
Reduce heat to low and simmer
gently, whisking constantly three
minutes more. Remove from heat,
stir in butter, liqueur and vanilla.
Transfer to a heat-proof bowl and
cover with buttered wax paper.
Refrigerate until chilled one hour, or
up to one day:
Topping and glaze:
3 clementines
1/3 cup orange marmalade
Spoon cream into pastry shells.
Peel clementines: with a sharp
knife, remove outer thin membrane
and slide out segments. Pile into a
sieve and drain until serving time.
Divide among tarts (4-5 sections
each).
Heat marmalade until melted,
brush lightly over tarts.
BUTTERMILK SHAKE
Juice of 6 lemons
1 cup sugar
2 qts. buttermilk (well chilled)
crushed ice
Mix lemon juice with sugar and
stir until dissolved. Stir in
buttermilk. Shake with plenty of
crushed ice.
Serve immediately.

will be presented at the Aug. 24
meeting.

Flowers on the memorial table

who passed away recently in
Rycroft, Alberta. Cora was the sister
of Marie Bromley to whom the
community offers condolences. A
memorial service celebrating Cora’s
life was held at Londesbrough
United on Sunday afternoon.

We have enjoyed our two-year-old
little angel for her week of holidays
and she is heading home today. She
enjoyed her time with Mum-Mum
and Pa. as she calls us. She had a
play-date with cousin Emily
Drennan in Goderich, two trips to
the library, leaf collecting, bug
squashing, lots of soccer and garden
watering 101.
She is rested and ready to head
back to the stress-filled life of a city
toddler with sand-box down-sizing
and cooperation takeovers, and
good luck with the restructuring of
the parent company we talked about.

proposed for the Wingham Fire
Department. The Council was under
the impression that there shouldn't
be a fee. The Wingham Fire reps
