Debate
continues
over
truck

A decision on a truck for the public
works director has been deferred
until the March 3 budget discussion
for North Huron.
At the regular meeting on Monday
night, councillors continued a debate
that has been taking place off and on
for several months.
Currently the director of public
works, Ralph Campbell is using his
own vehicle for township business.
However, since his insurance
provider then deemed it a
commercial vehicle his insurance
tripled, so council has been paying
him 45 cents a kilometre.
When a decision was reached
some time ago to buy a truck, four
companies tendered. Clerk
administrator John Stewart
explained Monday night that only
two of those had tendered for the
requested specifications.
In one case, to get the specified
feature, the tender included features
which some councillors felt were
unnecessary.
The two tenders that didn’t come
as requested could not, Stewart felt,
be accepted. “When we tendered we
thought we’d be comparing apples to
apples. I don’t think we can go out
and just get the truck that suits us
when two sent in the tender we asked
for."
Campbell would be satisfied with
just the better seat, he noted, but
prefers one make over another
because of blind spots and access to
the manual door handle.
The tendered costs were
$28,629.25 from Tolton and $29,095
from J.L. McCutcheon for the
requested packages. Bridge Motors
submitted a tender of $25,530
without the better seat or power
windows and locks, while John
Cullen’s tender included only the
seat at a cost of $27,071.
1 think if we don’t want the power
windows and locks we have to go
back and give everyone the same
chance,” said Stewart.
While some councillors felt that
they needed to move on making a
decision because of the cost of
paying mileage, councillor Archie
MacGowan re-iterated his initial
concerns about purchasing the truck.
"My concern is cash flow, mileage is
over a year, while a truck purchase is
immediate. in a few days time we’re
going to be looking at ways to cut.
I’m struggling a bit with this. 1 have
a niggling feeling we’re going to
have to start to weigh the things
we'd like to have and the things we
must have.”
Deputy-reeve Murray Scott
wondered if council needed a policy
in place to determine which
employees would have a township
vehicle. “It’s time we made some
decisions.”

25 - 30 minutes.

RAISIN COCONUT BARS
3/4 cup butter, softened
1/2 cup sugar
2 cups all-purpose flour
3 eggs
1 tsp. vanilla
1 cup packed brown sugar
3 tbsp, flour
1 cup rains
1/2 cup shredded coconut
1 cup icing sugar
Cream together butter, white
sugar, and 1/2 tsp. salt. Stir in 2 cups
all-purpose flour. Gently pat into
9x13x2 pan. Bake at 350° for
approximately 20 minutes.
Beat eggs lightly with a fork, add
vanilla and brown sugar. Combine
and add 3 tbsp, all-purpose flour, 1/2
tsp. salt. Stir in raisins and coconut
Spread over baked bottom. Bake at
350°, 20 - 25 minutes until golden
brown.
Meanwhile mix icing sugar,
vanilla and a bit of milk to make a
glaze. Drizzle over warm base. Cool
and cut into bars.
MOTHER’S RAISIN PIE WITH
A LATTICE TOP
2 cups large raisins
1 1/2 cup boiling water
1/2 cup brown sugar
2 tbs-p. cornstarch
juice of one orange
grated rind of 1/2 orange and
grated rind of 1/2 lemon
2 tbsp, lemon juice.
Cook raisins five minutes in the
boiling water. Mix brown sugar and
cornstarch; slowly stir in to raisins
and cook until thick. Remove from
stove.
Stir in remaining juice and grated
rinds. Pour into lined 9" pie plate.
Roll out top, cut into narrow strips,

RAISIN ALMOND POUND
CAKE
1 cup sugar
3/4 cup butter
4 eggs
2 cups all-purpose flour
1/2 tbsp, salt
1 tsp. nutmeg
1/4 tsp. baking soda
1/2 cup buttermilk
1 cup raisins
1/2 cup finely chopped candied
orange peel
1/2 cup ground almonds
In a large bowl, cream butter and
sugar until light and fluffy. Add eggs
one at a time beating well.
Sift together flour, nutmeg, salt
and soda; add dry mixture to
creamed mixture alternately with
buttermilk. Combine well with each
addition. Fold in raisins, peel and’
nuts. Scrape into greased 9x5x3 pan.
Bake at 350° for 60 - 70 minutes.
Cool in pan. Then enjoy!
RAISIN PASTRY SQUARES
1 cup raisins
water
2 cups all-purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
3/4 cup butter
5-7 tbsp, milk
1/4 cup sugar
additional milk and sugar for top
In a saucepan cover raisins with
water. Bring to a boil, let stand 5
minutes. Drain and set aside.
Blend flour, salt, baking powder;
cut in butter as for pastry. Gradually
add 5 - 7 tbsp, milk, gently mix with
fork until well moistened. Form into
a ball on a floured surface.
Roll pastry into a 17x11 rectangle,
carefully and smoothly. Transfer
pastry to a baking sheet, spread
raisins evenly over lengthwise half
of pastry. Sprinkle 1/4 cup sugar
over raisins, fold pastry carefully
over raisins and seal. Brush with
milk and sprinkle with a bit of sugar.
Bake at 375° for 30 - 35 minutes.
Cool and cut into squares.

Wedding^nnouncement
SEMPLE-McCALLUM
Crystal and Chad were united in marriage August 7, 2004 in
a beautiful outdoor wedding held at the home of the groom’s
parents. The bride’s attendants were Jodi Semple, Suzanne
Terpstra, Patricia Cummings and Janice McCallum. The
groom’s attendants were Pete Terpstra, Randy Beuermann,
Mark McClure and Rob Semple. Flower girls were Meaghan
and Morgan White, cousins of the bride. Bible readings were
given by Josh Beuermann and Melissa Sill. Chad is the son
of Ron and Betty McCallum of Walton and Crystal is the
daughter of Calvin and Gail Semple of Ethel.
