They have all
been tested by
me in my
home, and will
come from many sources. They are
easy family food that teenagers and
parents will enjoy.
ENGLISH TRIFLE
8 cups stale cake cubes
1 cup sherry
1 cup your favourite jam
1 3/4 cup milk
2 eggs, 1 egg yolk
1/4 cup sugar
1 egg white
1 tbsp. powdered sugar
1 cup whipping cream
1/2 tsp. vanilla
1/4 cup slivered almonds for
garnish
Place half cake cubes into a
decorative 2-quart glass bowl.
Dribble some of of the sherry over.
Cover with the jam. Top with
remaining cake cubes. Moisten with
sherry using remainder of cup.
In a saucepan beat eggs and one
yolk. Stir in milk and sugar, cook
and stir until custard coats the back
of a spoon. Remove from heat; cool
at once in ice water, stirring
occasionally.
Spoon cooled custard over cake.
Beat egg white to soft peaks.
Gradually beat in powdered sugar,
beating until very stiff.
Whip cream with vanilla, fold into
egg whites. Pile on top of custard.
Refrigerate six hours or overnight.
Garnish with the slivered almonds.
10-12 servings.
SALMON SQUARES
3 cups cooked mixed vegetables
2 crumbled hamburger buns
1/2 cup milk
1 can salmon
2 eggs
1/2 cup mayonnaise
1 tbsp. lemon juice
Spread vegetables in a greased 2-
quart casserole. Combine buns with
milk in a large bowl; add salmon
including bones and juice. Mix and
mash together. Add beaten eggs,
mayonnaise and lemon juice;
combine well. Spread over
vegetables evenly.
Bake at 375°F for 30 minutes or
until set.
Cut into squares and serve with
tartar sauce, buttered beets and
salad.

The Lost Sheep took home a victory last week in broomball
action at Blyth arena. The ladies worked through a tough
game against Hits N Misses but edged them out with a

Rollers close door on Palmerston Polar Bears
The Palmerston Polar Bears
PeeWee team travelled to Blyth on
Dec 16 to play broomball against the
host team, the Blyth Rollers.
Zach Drost was able to score the
first goal for Blyth to put his team on
the scoreboard. Drost had help
getting the ball near Palmerston's net
from Lanie Smith and Laura Souch.
With just over eight minutes left in
the first period Wyatt Bearss scored
a nice goal after an assist from Derek
deBoer.
Bearss scored another goal after
picking up the pass from Hunter
Broda. Broda earned the final goal of
the first period after picking up the
ball from Palmerston and settling the
ball down for a successful slapshot
into the Polar Bears net.
The Rollers were ahead 4 - 0 at
halftime.
In the second period Palmerston
played a much more aggressive
game. Bearss made a beautiful shot
on net, but Palmerston's goalie
stopped the ball. deBoer picked up
the ball and chipped it into the net
for his team.
The last goal of the game came
from Blyth's Laura Souch, after she
stole the ball from her opponents and
took a wind up shot to get the ball
into the Palmerston net. The final
score was a 6-0 shutout, another win
for the Blyth Rollers.
The Rollers defensive players
Jasmine Ducharme, Shelby Haakers,
Hunter Broda, Jordon deBoer, Tyler
O'Rourke and Jordon Reinink
played their postions and made some
very good defensive moves to stop
their opponents from getting a goal.
Atom team
posts tie,
loss in
games
Brussels Atom Local League
players suited up to play Elma-
Logan in recent hockey action.
The team travelled to Monkton for
the game which ended in a 1-1 tie.
With four players missing, the squad
had their work cut out for them, but
never stopped fighting, coming back
from a 1-0 deficit.
Elma-Logan scored in the first few
minutes of the game, but Brussels
held on to keep it within reach. Then
with two minutes left, Taylor
Higgins skated in to finish the match
in a tie.
On Saturday, the Brussels Atoms
played Mitchell in another good
game. The opponents scored two but
Brussels kept the pressure on and
Nic Zwep finally bulged the twine.
In favour of an extra player on the
ice, Brussels pulled the goalie to try
to even the score. Unfortunately,
Mitchell found the empty net and
finished the game as victors with a
score of 3-1.
Austin Johnston had solid outings
in net for both games.
Blyth's goalkeeper, Murray Dale
did a great job covering the Rollers
net. Dale didn't receive a lot of
action during the first period, but his
keen reflexes were put to the test
during the last part of the second
period, when he made several
fantastic saves for Blyth.
