They have all been tested by me in my home, and will come from many sources. They are easy family food that teenagers and parents will enjoy. PEACH STREUSEL COFFEE CAKE Streusel Topping: 1/3 cup all-purpose flour 2 tbsp oil 2 tbsp brown sugar 1/2 tsp cinnamon Grease and flour a 9" spring-form pan, set aside. Ingredients: 1 1/4 cup all-purpose flour 1/4 cup sugar 1/4 cup butter 1 1/2 tsp baking powder 1/2 tsp salt 1/4 cup milk 1 egg 1/2 tsp almond extract about 2 1/2 cups peeled, pitted and sliced peaches Preheat oven to 375°F. Combine all all ingredients for streusel in a small bowl and set aside. In a medium bowl combine flour, sugar, salt and baking powder. Cut in butter until the mixture resembles coarse crumbs. In a cup beat egg, milk and almond flavouring and stir into flour mixture until smooth. Spread batter evenly in the prepared pan. Arrange peach slices overlapping over top of batter. Sprinkle with streusel topping Bake for 35 - 40 minutes or until peaches are cooked and a tester comes out clean. Cool on a rack 10 minutes. Run a knife around edge of cake to loosen; remove side of pan. Delicious served warm. CHOCOLATE ZUCCHINI CAKE 4 oz unsweetened chocolate 1/2 cup vegetable oil 1/2 cup buttes 2 cups sugar 3 eggs, beaten 1 tbsp vanilla 2 cups all-purpose flour 1/3 cup cocoa 2 tsp each baking powder, baking soda 1 tsp salt 1/3 cup buttermilk 1/3 cup grated zucchini 1/2 cup chopped nuts Cream butter; add sugar, eggs, vanilla. Melt chocolate with oil over low heat. Sift together flour, cocoa, salt, baking powder and baking soda. Add melted chocolate to batter, stir well. Stir in sifted dry ingredients with buttermilk. Mix in zucchini and nuts. Scrape into greased and floured 9x13 pan. Bake for 40 minutes at 350°F. This cake can be frozen successfully cut into squares, ready to pop out when needed quickly. Short Putts - By Bill Johnston Sunday, July 16, the Battle of the Ages at the Wingham golf course turned out to be a battle against the heat as the temperature zoomed above 30°C and humidity was at a very high level. This cut the field of participants and 24 golfers took part in a four- man scramble. What a battle it was. Three teams ended tied with scores of nine under par. One winner was made up of Joel and Jerrad Riley, Zack O'Krafka and Jim Ross. Another winner consisted of Trevor Hopf, Don Rae, Mark Hackett and Jamie Chester. The third winner who recorded the only eagle of the day with a three on the par five first hole • consisted of golfers Kirk Stewart, Warren Inglis, James King and Dean Tiffin. *** On July 18, several ladies competed for the McKinney trophy, an 18-hole competition with handicaps. Competition was keen and after the first nine several golfers were tied for the honours but on the back nine Linda Walker with pars on holes three, five, six and eight pulled away from the pack to capture the trophy with low net. Her low gross of 88 was also top for the day. *** Wednesday, Aug. 2 is a big day for the ladies and some of the best golfers in the area will be on hand for the ladies' invitational. It is an 18-hole competition with an 11 a.m. shotgun start with four flights with handicap cards required. *** There were 18 out for Wednesday seniors' play with some new names on the leader board. Jim Ross had a great round with pars on holes one, two, four and five to tie for top honours with Roger Lloyd. Next in line were Bill Deans and Don Rae, with Don recording a birdie on hole one and pars on holes three, six, seven and nine. The final prize was won by Ken Saxton. *** Wednesday men's night continues to be popular and it is nice to see a good turnout of the younger crowd. In the A flight Rob Gallaher captured low gross with a 37 with low net a tie between Trevor Hopf and Trevor Machan. In the B flight low gross with a 40 was Bill Dauphin with Joe Clark and Shawn Cottrill tied for the low net. Skins were won by Al Godfrey, hole three and Joel Riley, hole nine. Closest to the pin winners were John Dailleboust on hole two and Curt Knight on number seven. And believe it or not, with 24 golfers out, no one could hit the green on number five i--- that must be a first. *** With early afternoon rain and threatening skies Thursday night's crew was down to 14 golfers. There were two new names on the leader board as top spot was a tie between Dennis Knox and Jack McPherson, both with 41. With the numbers down the skins were well distributed with Jack McPherson with three and single skins to golfers Ross Danbrook, Rob Gallaher, Art DeVos, Jim Ross, Brian LaChance, and Murray Coghlin. Winner of the longest putt on number eight was Ross Danbrook. *** Monday night's storm caused a little havoc hitting a maple tree behind the fifth tee-off and putting the clubhouse into darkness until early Wednesday afternoon. Thunder in quarter final Continued from page 8 This was against Bayfield. L. VanDorp scored the first goal of the night and his brother J.P. VanDorp got credit for the assist. Blyth's Zachary Drost booted the ball up the field to J. P. VanDorp for the second goal of the game. Bayfield had a breakaway and scored to -tighten up the score. Blyth had a 2-1 lead at half- time. Jessica Tyler put the ball into Bayfield's net with assist earned by the VanDorp twins. Tyler took a penalty kick after there was a handball in the crease. Bayfield's goalie stopped the ball, but Tyler ran in and scored on the rebound. Bayfield was able to get another ball past Blyth's keeper, Randell. The final goal of the game came from Peach with an assist earned by The cool fresh morning was the perfect start to Blyth Lightning U-11 quarter-final game against Clinton Milan. Coach Bert Sjaarda sent out captains Courtney Monk and Alex Peters to win the toss, for first kick. The game was off to a running start. The first goal went to Blyth from a corner kick from Peters. The ball went back and forth until Sarah Steele nabbed the ball and made a quick pass back to Peters who took a They're coming out swinging this weekend as the 35th annual Brussels Men's Invitational Fastball tournament gets underway in Brussels beginning at 7 p.m. July 28. The final score was 5-2, a victory for Blyth Thunder. This win earned Blyth another three points and a spot in the quarter- final game. Blyth Thunder met Clinton United at the Fleming Field for the quarter final game on July 22 at 11:15 a.m. L. VanDorp started out as goalkeeper and he did a fantastic job making many great saves to keep Blyth in the game. However, Clinton was ahead 2-0 at halftime. Zach Drost made a good effort covering the net for Blyth during the second half of the game. Clinton was first to score after they kicked the ball into the top shelf of the net on a corner kick. Drost just wasn't tall enough to stop that ball. Halfback Charlene Schramm booted the ball up the field high shot from the corner. Blyth was leading the game 1-0. Clinton was not to be outdone and soon took control of the ball. Time and time again, Lightning's defence and goalie Wyatt Bearss made some great saves but Milan pulled ahead with three goals. With the score at 3-1, Blyth's Tyler Guetter took control of the ball and popped it to Alex Peters. From the centre line, Peters took a long hard shot. Milan's goalie almost had game Friday night with Brussels and Walton Masters hitting the diamond. The Brewers from Walton take on the Monkton Muskrats on Friday at 9:30 p.m., while the Tigers play Saturday morning at 8:30 a.m. against the Atwood Avengers. At 10 p.m. the Brussels Masters will play Stratford while the Walton Masters will play Stratford at 3 p.m. to J. VanDorp for Blyth's only goal of the game. Clinton was able to score again after the ball slipped past the Blyth's goalie's hand. Blyth had scoring opportunities, but was unable to get the ball past Clinton's strong defence and goalkeeper. The final score was 4-1 for Clinton. This loss put Blyth Thunder out of the tournament. Coach Anne-Beth VanDorp was very pleased with the effort each member of the team put forth to play in this year-end tournament. "Blyth Thunder players really worked hard at playing their positions to the best of their ability, gaining ball control and making accurate passes to get to the quarter final tournament game," she said. the ball but it flew over him and in ,the net for Blyth's second goal.
