WI holds Christmas meeting FROM AUBURN Country Fare Hoping you will enjoy and use some of the recipes I will be giving each month. They have all been tested by me in my home, and will come from many sources. They are easy family food that teenagers and parents will enjoy. PINEAPPLE BAVARIAN CREAM 2 cups crushed pineapple 2/3 cups sugar 2 cups heavy cream 2 egg yolks 1 1/2 envelopes gelatin 2 tbsp. cold water 1/8 tsp. vanilla 1/2 cups whipping cream Mix pineapple with 1/3 cup sugar and stir until dissolved. Bring 1/2 cup cream to boiling point. Beat eggs and gradually beat in hot cream and remaining sugar. Sprinkle gelatin over cold water and let stand for 5 minutes. Add gelatin to hot cream mixture and stir until gelatin is dissolved. Cool and add pineapple mixture. Chill until mixture starts to thicken. The members of the Auburn Women's Institute met at the Auburn Community Hall at 12:30 p.m. on Dec. 16 for their Christmas meeting. President Marg Fraser welcomed everyone and led in the Ode, Mary Stewart Collect and 0 Canada after a potluck dinner. Laura Mae Chamney was at the piano and Marg Siertsema led in a sing-song of Christmas carols. Tena Empey introduced Rev. Pat Cook from Knox United Church as the guest speaker. She read the story, Christmas Love, from Chicken Soup For the Christian Soul. Whip remaining heavy cream until stiff. Fold cream into pineapple mixture. Pour into 1 quart mold. Chill until firm. Unmold by dipping into luke Warm water for a few seconds. Place Bavarian cream on .a platter. Whip remaining cream until soft and fluffy. Spoon over Bavarian. Serves 6 - 8. CREME BRULEE 2 1/2 pints 18% cream 12 egg yolks, beaten 2 tbsp. icing sugar 3 tbsp. vanilla 4 tbsp. brown sugar Pour cream into top half of a double boiler over gently simmering water. Carefully stir yolks that have been beaten with the icing sugar and vanilla into the warm cream. Continue stirring until the cream has thickened enough to coat the back of a wooden spoon. Strain the cream through a fine sieve into a large souffle dish and chill for at least four hours. Sprinkle the brown sugar on top of the chilled cream. Set the dish on a bed of ice cubes on a grill pan and place under a hot broiler until the sugar has caramelized. Remove the dish and chill in the refrigerator for 2 - 3 hours. She was thanked by Theresa Roetcisoender and presented with a poinsettia. The roll call was given. Some members had brought a friend to the meeting. Others entertained and some paid the fine. A gift exchange was conducted by Jean Plaetzer. Everyone received a gift. Mrs. Chamney and Jane Glousher conducted a cookie sale which Judges pick top houses of season The judges made their selections for the top best-festive homes in Auburn last week. The winners are: first, Gerald and Carol McDowell; second Aime Labrie; third, Wayne and Cathy Carter and honorable mention, Sandy and Shirley Andrews. Congratulations. Kathy Bridge and friend of Brussels demonstrated how to make a Christmas ball, starting with a styrofoam ball, squares of material, pins and trim. This brought an enjoyable afternoon to a close.
