COCONUT KISSES 3 1/2 cups shredded coconut I can condensed milk 2 tbsp. cornstarch I tsp. each vanilla, lemon juice In a medium bowl mix coconut, cornstarch, vanilla, lemon juice and most of the can of condensed milk. The mixture. should be moist and hold together. Add a bit more milk if not moist enough. Mound up a scant tbsp. of mixture about 1/2" high and place about I 1/2" apart on a lightly greased cookie sheet. Bake at 350°F for 15 - 20 minutes. CASHEW PUPPIES 1 1/2 cups unsalted roasted, coarsely chopped cashews 2 cups flour 3/4 tsp. baking powder 3/4 tsp. baking soda 1/4 tsp. salt 3/4 cup brown sugar 1/2 cup butter 1 large egg 1 tsp. vanilla 1/2 cup sour cream In a small bowl, sift together flour, baking powder, baking soda and salt, add the cashews and set aside. In a mixing bowl cream butter and sugar until light and fluffy. Beat in the egg and vanilla and sour cream until mixed. Gradually beat in the flour mixture just until mixed. Drop by heaping teaspoons 1 1/2" apart onto greased cookie sheets. Bake 10 - 15 minutes at 350°F. Let cool on sheets two to three minutes then transfer to wire racks to cool completely.
