They have all been tested by me in my home, and will come from many sources. They are easy family. food that teenagers and parents will enjoy. LEMON ASPARAGUS 1 Ih. asparagus. cleaned, tough ends trimmed and reserved, cut off tips 1 1/2" from top, reserve I medium onion chopped 1/4 cup margarine 2 cups water 1/2 tsp. grated lemon peel 1/2 cup celery chopped 3 tbsp. cornstarch I cup milk pinch of nutmeg In a two-quart saucepan cook tough asparagus ends in the water for 10 minutes. Remove tough ends. Add onion, celery and asparagus stalks, simmer 20 minutes more. Rub through a sieve. Add cornstarch and milk to stock, cook until thickened. Theresa McDonald-Lee was on study leave this past week. three members of the Monkton Presbyterian congregation took the church service in Cranbrook and Monkton on Sunday. Shirley Bannerman led the worship and had the children's story. Ernie Naylor read the scripture and gave an inspiring Father's Day sermon. Diane . Simpson led in prayer and announced , some of the hymns. There has been another change in the neighbourhood as Chris and By Stew Slater Special to The Citizen With early 2005 completion dates seemingly achievable for the reconstruction of , Clinton's St. Joseph's elementary school and the relocation of St. Mary's elementary school from Hesson to Listowel. the Huron-Perth Catholic District School Board has begun prelim- inary steps in one of its next facilities renewal projects: St. Mary's elementary school in Goderich. At a special meeting Tuesday, June 15. trustees agreed to retain the services of a Goderich-based architectural firm headed by Allan Avis. to assist in design and Shelly Smith have torn down their barn. John and Iola Subject helped Edna McLellan and Neil Hatt with the card party on Friday night. Share- the-wealth winners were Neil Hatt and Mary Davidson. The travelling lone hand was won by Mary Davidson. The high score for ladies went to Myrna Burnett and the high for men Lloyd Weber. Those not-so-lucky were Eleanor Stevenson and Keith Turnbull. Lone hand winners were Shirley Verstoep and Lloyd Smith. construction of a major addition to the s( hoot. The initial meetings about that process will likely begin in July. said Gerry Thuss, the board's business superintendent. The addition would replace a group of six portable classrooms. currently in use at the school. Thuss said he'd-like to see the project completed by the fall of 2005. The other major upcoming capital project for the board is an addition to St. Joseph's elementary school in Stratford. brought on by a decision by trustees to redraw school attendance boundaries within the city. ASPARAGUS BACON QUICHE I unbaked pastry shell 9" 1 lb. asparagus trimmed, cleaned and cut into I" pieces 6 bacon strips, cooked Crisply and crumbled 3 eggs 1 1/2 cups half and half cream I cup grated parmesan cheese. divided 1 tbsp green onion, sliced I isp sugar pinch of salt, pepper, nutmeg Line unpricked pastry shell with tinfoil. Bake 450°F five minutes. Remove foil. Bake five minutes more. Set aside. Cook asparagus pieces in a small amount of water 3 - 4 minutes. Drain well. Keep this water for stock. Arrange bacon and asparagus in pie shell. Beat eggs. cream, 1/2 cup cheese, onions, sugar, salt, pepper and nutmeg. Pour over asparagus. 'Sprinkle with remaining cheese. Bake 400°F 10 minutes. Reduce heat to 350°F. Bake 20 - 25 minutes longer, or until a knife inserted near the centre comes out clean. Serves 6- 8. Adrian Verstoep, Yvonne Knight. Eileen Mann. Isabelle Bremner. Many people took their fathers out to the Brussels firefighters' breakfast for Father's Day and were not__ disappointed as the food was great. Whatever you did with your dad on the weekend it would have been appreciated. Thank goodness Sunday was a little warmer for outside activities. A reminder too, that on Sunday, June 27 starting at 4 p.m. is the potluck supper in the Cranbrook Community Centre to honour Peter Hagedoorn before he moves.
