CROCKPOT BEEF DINNER
2 lbs. round steak
1/2 cup catsup
1/2 cup water
1 large.onion
I large carrot
1 celery rib
1/2 green pepper
1 tbsp. vinegar
Dice all vegetables.
Trim fat from meat; cut into six or
eight pieces. Place all vegetables in
crockpot. Place meat on top.
Sprinkle with salt and pepper. Mix
catsup with 1/3 cup water and
vinegar. Pour over meat. Cover,
cook on low heat six to eight hours.
CREAMY CARROT
CUSTARD
3 eggs
1 1/2 cup cooked mashed carrots
3 cups milk
I tsp. salt
3 tbsp. fat
Beat eggs well, add remaining
ingredients. Pour into a greased
casserole. Place in a pan of hot water
and bake one hour at 350°F or until
a knife inserted in centre comes out
clean.
Serve hot. Serves 6.
This dish can be easily doubled
for more servings.

Remove meat. Pour vegetables
and liquids into saucepan. Skim off
excess fat. Return meat to cooker.
Blend 1/4 cup cold water with 2
tbsp. flour. Stir into vegetables.
Cook and stir until thickened and
bubbly.
Serve with garlic mashed
potatoes.

Huron council accepted the proposal
of Cowan Public Entity for
municipal coverage in the amount of
$93,779 plus taxes. There is a
$10,000 deductible.

Sue Bursey, owner of Northern
Night Tavern spoke to council
regarding her concerns over a county
smoking bylaw. She said such a
bylaw would hurt her business and
noted that she would be willing to
make certain concessions such as
having special smoke-free areas,
exterior advertising advising patrons
that smoking is being permitted and
prohibiting children from the
premises.
Councillor Archie MacGowan had
declared a pecuniary interest in the
matter and had left council chambers
during Bursey's. remarks.

Council agreed to waive the rental
fee at the Blyth and District
Community Centre for the
Blyth/Scouting committee's annual
family potluck supper.

Several recommendations from
the committee of the whole were
adopted.
The quote of Huron County
Highways Department in the amount
of $1,262.88 plus taxes to produce
and erect five Welcome to North
Huron road signs was accepted.
Council accepted the quote from
D&1 Watson for snow-removal at the
Wingham Municipal Airport.
An agreement for a nine-year
contract for Pepsi/Gatorade for the
Blyth and District Community
Centre will be signed on council's
behalf.

Council authorized the transfer of
the following amounts to reserves:
$9.010 to an insurance deductible
reserve; $48,707.03 to . working
funds reserve and the balance to the
capital police renovation account for
renovations in 2003.

Council hears concerns
about smoking bylaw
(NC)—While there's no such thing as a
"miracle food," there are certain foods
that everyone should try to eat more of
— fruit, vegetables, legumes, and
