Mike and Cynthia Beretta, RR4, Wingham, who have purchased Your Choice Meats from Don and Jill Sholdice, are hoping to create a nostalgic atmosphere. "We have some ideas to try and make it as old-fashioned a meat shop as possi- ble. Everyone has a memory of that so we're trying to recapture a bit of the old atmosphere," said Mike. The couple, who has three young children, Thomas, three, and 11- month-old twins, Marcus and Lieshen, moved to Morris Twp. from Tottenham five years ago. Mike, a graduate of the University of Guelph is an organic farmer, who, for many years, has been building a solid market in Toronto. He sold pork, then beef and sheep, in the city every week starting with family and friends. "By word of mouth I kept picking up new cus- tomers. Presently I'm at 135 fami- lies and several restaurants and hotels." Having reached his limit, Mike, who enjoys the butchering aspect of the business, thought that buying On Tuesday, Feb. 3 the Majestic Women's Institute hosted its monthly euchre party at the Brussels Library. There were six tables of cards played. The next euchre will be held Tuesday, March 3 at 8 p.m. the meat shop would tie in and allow greater access to the Toronto market. Beretta's Butcher Shop, which officially opened Feb. 10, will be offering all local products. With his weekly trips to Toronto, Mike, who will continue to farm, expects to be expanding the market for other local livestock producers as well. Hours for the shop will be Tues- day to Saturday 9 a.m. to 6 p.m. Killing will be done by appoint- ment on Mondays. The phone num- ber remains 887-6294. And for those who are interested in organic meat, custom orders will be taken. For the rest of the business Mike said he will take it one step at a time. While Cynthia currently works at the CIBC the couple hopes she can one day be full-time in the family business. Beth McCauley will continue in the store full-time while Scott Somers will be there on a part-time basis. Council briefs Staff sgt. tells OPP story The building controversy around the issue of policing prompted a visit to Brussels council Feb. 2. Staff Sgt. Brian Baldwin of the Goderich OPP wanted to discuss the pros of staying with OPP ser- vice as opposed to forming a North Huron regional force from the existing Wingham Police Services. Baldwin first questioned the num- ber of officers Wingham Chief Dore said he would provide in con- junction with the increased service he promised. "He would need 28 officers to have three to five on each shift. What he is suggesting, I'm telling you now is physically impossible." Dore had said the detachment would have 11 constables, two sergeants and one chief. Other problems Baldwin secs with a regional force concern issues of liability, proper communication, and extra costs which could be incurred through the need for spe- cial OPP units. While Dore had said the latter would be made avail- able to municipalities not serviced by the OPP at no cost, Baldwin said this is no longer the case. He suggested that councils decide on the level of service they want, then seek a proposal from the OPP and Dore so that proper com- parisons could be made. *** A proposal from the joint build- ing committee suggested that Chief Building Official Paul Josling be paid 35 cents per kilometre as opposed to a flat rate of $100 per month. This would make Brussels consistent with other municipalities that employ Josling. *** Josling will attend a five day course on inspections for plumbing and on-site sewage. Brussels will pay one-fifth of the cost. *** A donation of $125" is being given to Blyth Festival. *** A recommendation from Blyth asking AMO to keep its commit- ment to continue the education tax campaign was supported.
