5 peaches, peeled, pitted and
quartered
2 cloves garlic, peeled
1 each sweet yellow, red and
jalapefo peppers, cored seeded and
quartered
1 cup (250 mL) bottled peach
nectar
1/4 cup (50 mL) white wine
vinegar
salt and white pepper
In food processor or blender,
combine peaches, garlic, peppers,
peach nectar, vinegar and salt
and pepper to taste; process until
finely chopped. Refrigerate,
covered, at least 1 hour or up to 2
days.
FROZEN PEACH MOUSSE
WITH BLUEBERRY SWIRL
2 cups (500 mL) low-fat yogurt
2 cups (500 mL) blueberries
1 cup (250 mL) granulated sugar
1/4 cup (50 mL) amaretto liqueur
or peach schnapps
1 1/2 tsp (7 mL) cornstarch
1 tbsp (15 mL) cold water
4 peaches, peeled and pitted
2 tsp (10 mL) fresh lemon juice
1 cup (250 mL) whipping cream,
whipped
Place yogurt in cheesecloth -lined
sieve set over bowl; set aside.
Puree blueberries and simmer
with 1/4 cup (50 mL) of the sugar, 5
min. Stir in amaretto. Blend
cornstarch with water; stir into
blueberries. Boil, stirring, 1 min.; let
cool to room temperature.
Purde peaches with lemon juice
and remaining sugar; transfer to
large bowl. Fold in whipped cream
and drained yogurt; pour into 8 inch
(20 cm) springform pan. Spoon
blueberry mixture decoratively
over mousse; draw knife through
mousse and blueberries to form
swirls. Cover and freeze at least 8
hours and up to 3 days. If frozen
more than 8 hours, remove to
refrigerator 30 min. before serving
in wedges.

1/4 cup (50 mL) packed brown
sugar
1 tbsp (15 mL) corn syrup
