Soybean
research could
use an edge
Research at the Guelph Centre
for Functional Foods could help
in the identification of the most
isoflavonc-rich soybean variet-
ies and give Ontario soybean
producers a competitive edge in
the global market for healthful
soybean -based foods.
While Ontario's soybean crop
has mostly been used for animal
feeds, the production of edible
oils and non-food products from
linoleum to printing inks, soy-
beans have been a nutritious
part of the diet of Asian cultures
for 5,000 years. Studies of soy -
consuming populations have
revealed much lower incidence
of a wide range of cancers, heart
disease, kidney disease,
osteoporosis and menopausal
symptoms.
Credit for this may go to
isoflavones. Contained in soy-
beans, they are a class of phyto -
estrogens. With industry and
federal government partners, the
Guelph Centre is in the process
of identifying superior soybean
varieties and production
practices that will increase the
nutritional components of soy
products. Different varieties of
soybeans and the environmental
conditions in which they were
grown (crop year and location)
are being tested for isoflavones,
protein and lenoleic acid — a
compound that's thought to
reduce blood cholesterol.
Studies at the centre have
shown that while protein and
linoleic acid concentrations are
relatively constant with respect
to variety and environmental
factors, there is a major fluctua-
tion of isoflavone concentration
depending on variety and crop
year. Certain varieties of soy-
beans have high isoflavone
concentration regardless of
environmental factors.0
