The Rural Voice, 2019-03, Page 55Editor’s Note: The Rural Voice is excited to announce the recipes column will now be a rotating column between three esteemed chefs/cooks and bakers: our very own Anne Mann who will be focusing on gluten-free recipes; Dorothy Henderson, a published author from Exeter and this month, Nancy Fisher, an engaging blogger and instagrammer. Here is a little introduction to Nancy: Nancy Fisher (AKA Mrs Murfin) lives with her family near Goderich at a place she calls Hedgehog Hill. Her love of all things creative has led her to many an adventure in making, growing and cooking. Never one to follow rules or recipes her experiments often have unexpected results. They are not all bad results, but often not as illustrated in original picture. She likes to share her love of the country life through her Instagram account mrsmurfin (frequently) and her blog www.mrsmurfins countrylife.com (less frequently). Her particular passions are for knitting and sewing and bookmaking. In the kitchen she likes to find ways to make dinner more exciting, and is extra happy if she is cooking what she grew herself. MARCH RECIPES The March wind doth blow, and we shall have snow and I will be baking up a storm. There is simply nothing like stepping into a warm house that smells like cinnamon and vanilla. I do love a recipe that has been passed down from generation to generation and I like it even better if the name of the original cook has become the official name of the dish. We have a lot of those in my family. This sour cream coffee cake was passed down from my Gran to my Mom to me. The original Mrs. Epstein was a neighbour of my Gran, and her coffee cake was legendary enough to carry her name. It is rich and sweet and fills a large loose base ring/angel food cake pan. If you don’t have one of those a deep 9 X 13 dish will do. You can also change up the filling to suit your mood or to use what’s in the pantry. The original calls for walnuts, but lately I’ve been loving pecans with a few halves nestled on the top for a little pizazz. Recipes by Nancy Fisher Favourites to bake during a cold winter New recipe columinist, Nancy Fisher, loves it when recipes are named after the original cook. Mrs. Epstein’s Coffee Cake (above left) is rich and sweet and you can change the filling to suit your mood. Ina’s Pineapple Squares (above, right) comes from a recipe book put together by the wives of servicemen when Nancy parents served overseas. March 2019 51
