And like the selection of a mate, the selection of the wine to match your wedding reception meal takes time. How is that done? A good caterer can be enormously helpful in this area. In addition, it's wise to keep in mind a few basic guidelines. The most important is: Don't be intimidated by a barrage of tongue- twisting foreign wine names or elitist debates about vintages. Consider what tastes good to you, not the so-called experts. Experiment a little with your caterer, or in your own kitchen. Pair wines with foods, and see how you like the combinations. CARAT WEIGHT Carat refers to the weight of a diamond and is a term derived from ancient times when the unit of measure was determined by the weight of a carob seed. The larger the stone, the rarer and more valuable it is. The rarity of a diamond is appreciated even more with the knowledge that approximately 250 tons of ore must be mined and processed in order to produce a one carat polished diamond. THE FINAL CHOICE When buying a diamond engagement ring the final choice rests on both personal preference and budget. Every couple will have to weigh the importance of each of the 4C's: cut, colour, clarity and carat size.
