sure that they are insect-free.

FRESH CAULIFLOWER. AND HAM CASSEROLE—Cauliflower, the "Cabbage with a college edu-
cation" gets excellent marks teamed with ham in a savory casserole. ,
1 teaspoon salt iii a saucepan,
Bring to boiling point, uncovered,
and cook 3' minutes, Cover and
cook until partly done, about 3
minutes, Drain and set aside for
later use, Melt butter and mar-
garine in a saucepan, Blend in
flour. Gradually stir in milk,
Cook until of medium thickness,
stirring constantly, Add 11 /2 tea-
spoon of the salt and cheese. Stir
until melted, Arrange cooked
cauliflower and ham ,in alternate
layers_ in a 1-quart casserole,
sprinkling each layer with remain-
ing salt, Pour cheese sauce over
all, 'Melt remaining 1 tablespoon
butter or margarine in a saucepan,
mix with bread crumbs and
sprinkle over the top, Bake in a
preheated moderate oven (350 de-
grees F.) 35 minutes or until
crumbs are brown, Arrange whole
cooked cauliflowerettes around
edge of casserole for garnish,

Casserole
4 cups sliced fresh cauliflower.
3A: cup boiling water
1 teaspoon salt
2 tablespoons butter or margarine
2 tablespoons flour
11% cups milk '
11/2 teaspoons salt
,% cup grated sharp Cheddar
cheese
2 cups diced cooked ham-or, lun-
cheon meat
1 tablespoon butter or. margarine
cup soft bread crumbs '
Cooked cauliflowerettes for gar-
nish
Place cauliflower, water and the

To cook cauliflower most appe-
tizingly, run an inch of water into
a saucepan, Add a teaspoon of
salt, and possibly a teaspoon of
fresh lemon juice to keep the
"curd" white, then bring to a boil.
Cook flowerets five minutes with
out a lid, then cover and cook
another 7 to 10 minutes, or until,
just ''crisp-tender" when tried with
alork. A whole head should cook
for an additional 5 minutes cover-
ed, but in any case, try under-
cooking cauliflower, if your pre-
vious cooking.method hasn't been
too successful. Another successful
hint: don't start cauliflower too far
in advance of the meal, for it can
overcook while .it's being kept
warm.

'First, prepare the fruit. Add 31/2

cups) dried apricots. Cover and

fruit, Ladle 'quickly into glasses.
Cover jam at once with 1.41 inch
hot paraffin.
Strawberry Date Jain
(Using quick-frozen strawberries)
Yield:, about 6 medium glasses
(3 lbs. jam)
2 cups ,(14 oz.) sugar
2%, cups quick-frozen sliced
strawberries, thawed
2 tablespoons lemon juice, (1 le-
mon)
cup' water
1/2 box (about 31/2. tablespoons)
powdered fruit pectin*
;WI ' cup diced pitted dates
Measure sugar and set.. aside.
Measure thawed strawberries into
a large saucepan. Add lemon juice,
water, and powdered fritit pectin
and mix well, Place oveh high
heat and stir until mixture comes
to a hard boil. At once stir in
sugar. Bring to a full rolling boil
and boil hard one minte, stirring
constantly. Remove fromq-iat and
stir, in dates; mix thoroughly. Skim
off foam with metal spoon, Then
stir and skim by turns for 5 min-
utes to cool slightly, to prevent
floating fruit. Ladle quickly into.
