Fresh leg of pork sometimes
veiled fresh ham, is .awaty
containing only a small amount of
bone. Canadians generally -do not•
like meat that is very fat -and that,
Is probably the main reason why
many females prefer this lean and
tender cut over other perk roasts..
A whole leg roast, even sold As .
it usually is with much of the cuter
layer of fat trimmed off, may
weigh as much as 15 pounds, This,
of course, is larger than the size
of roast most shoppers like to
`buy, so generally the leg is 014 in
two and sold as "shank" and
"butt".
The .shank is the lower part of
the leg and -the butt is the upper,
meatier part, Sometimes "fresh
ham steaks" are cut 4ronu the
centre part of the leg between the
butt and shank,
As with other" cuts of perk, the

a 325 degrees F. oven, until it is
well clone. (If you use a. meat
thermometer it should register 185
degrees F, when the meat is cook-
ed.) The cooked meat "should be
fork tender and greyish white in
colour, with no trace of pink,
especially near the bone,
It will take about 45 minutes a
pound to roast a shank or butt leg
roast weighting fi to 8 pounds, (Ex't
ample; for 6 pound roast allow
approximately - ho u rs, ) For
smaller roasts (3 to 4 pounds) ;
to an hour a pound may be requir-
ed for thorough cooking.
Seasonings should he added to
the roast halfway through cooking,
Sage, thyme, oregano, marjoram,
and garlic are some of the season-
ings good with pork. Onion, mush-
rooms, green pepper and celery
are all good, too, and of course
apples are perfect with pork.
