Open both ends of a large can of jel­ lied cranberry sauce. Push sauce carefully onto a plate. Cut into 3/8 inch slices and lay each slice flat. Then, using decorative cookie cutters, cut slices into leaves for autumn, into turkeys for Thanksgiv­ ing, or into stars for Christmas. Place slice on each plate and gar­ nish serving platters too. Your guests surely will be “berry" impressed. -Betty McCall, FIB 3, Walton. Christmas Breakfast Serves 8-10. 1/4 cup butter 1/4 cup flour 1/4 tsp. each thyme, marjoram, basil 1 cup half and half cream 1 cup milk 1 lb. old Cheddar cheese, grated 18 eggs, hard boiled and quartered 1 lb. bacon, fried and crumbled 1/4 cup chopped parsley Melt butter, blend in flour and spices. Add milk and cream. Stir until smooth and fairly thick. Add cheese until it's melted. In a 9 x 12 casserole or round equivalent, place half the eggs, bacon, sauce and parsley. Repeat. Bake for 30 minutes at 300°F. - Lenora Davidson, Bly th. Mom's Breakfast Saver Grease a 9" x 13" glass pan. Sprinkle bottom with chopped ham or bacon, 1 cup grated cheese and 1/2 cup diced onion. Beat 9 eggs, 2 cups milk, and 1/2 cup tea bisk, salt and pepper. Pour over meat and cheese. Bake at 350°F. for 1 hour. Let set 5 min. before serving. For a main course quiche add olives, green pepper, broccoli, etc. This is really handy for a breakfast dish for harried moms with overnight guests. - Marie Park, Goderich Baked Ham 8 slices ham (cured) 6 tbsp, brown sugar 3 tbsp, dry mustard 2 cups milk Place ham in baking dish and pour mixture over ham. Cover. Bake 1 1/2 hours or until done. - Aleda Shantz, Ayton. Turkey Manicotti 12 manicotti shells 2 1/2 cups ground turkey 1/3 cup mayonnaise 1/4 cup minced onion 1/4 cup minced celery 1 egg, well beaten 3 cups mushroom spaghetti sauce 8 oz. mozzarella cheese, shredded Cook shells in enough boiling salt­ ed water to cover for 5 min. Drain and cover in cold water. In a bowl mix turkey, mayo, onion, celery and egg. Drain shells well and stuff with turkey mixture. Place in a single layer in a greased shallow pan. Spoon sauce evenly over top. Sprinkle with cheese. Bake in a preheated 350°F oven for 40 - 50 min. or until cheese is golden brown. - Marie Park, Goderich. Apple Apricot Stuffing 1/4 cup butter, melted 1/2 cup chopped celery 1/2 cup chopped onion 6 cups day-old bread cubes 1/2 tsp. thyme 1 tsp. salt 1/2 tsp. ground pepper - 2 cups peeled chopped apples 1 cup chopped dried apricots Saute celery and onion in butter until limp and golden. Combine with rest of ingredients and toss lightly until well mixed. Taste for seasoning and stuff lightly into turkey before . roasting. - Sheila Gunby, PH 1, Dungannon. Holiday Expressions Personalized Christmas Tree Ornaments Carol Irwin (519) 523-4700 Honey Garlic Ribs 4 lbs. back spareribs 3/4 cup brown sugar 2 tbsp, cornstarch 3/4 cup water 3 tbsp, soya sauce 1 tbsp, honey or corn syrup 2 cloves garlic, finely minced 3/4 cup vinegar Cut through each rib. Place ribs in a large, shallow roasting pan and bake in a 375°F oven for about 1 1/4 hours, turning once. If the ribs are getting too dry and yet are not fork­ tender, add a little water to the pan. While they are baking make the sauce. Combine sugar with corn­ starch and water, soya sauce, honey and minced garlic in a small saucepan. Bring to a boil, stirring constantly. When ribs are fork-ten­ der, remove from roaster and place in a heat proof serving dish. Pour sauce over ribs and serve immedi­ ately or keep warm in a low oven. - Anne (Caldwell) Cottel, Crediton. Sweet 'N Smokey Chicken 1 large onion, sliced 1 - 3 lb. chicken, cut up 1/2 tsp. hickory-smoked salt 1/8 tsp. pepper 1/4 cup ketchup 1/4 cup maple syrup 2 tbsp, cider vinegar 1 tbsp, dijon mustard Bake 350°F. for 2 hours.
