Soften gelatin in cold water. Combine % cup sugar, salt,
milk. Add lightly beaten egg yolks in small saucepan. Cook,
over low heat until mixture coats spoon, stirring constant-
ly, Remove from heat, stir in softened gelatin, mix until
dissolved. Stir in grapefruit juice, Chill until mixture is
partially set. Blend in diced grapefruit sections and lemon
rind, Beat egg whites until they stand in soft peaks. Gra-
dually beat in remaining 14 cup sugar to make a moder-
ately stiff meringue. Fold in gelatine mixture. Serve, chill-
ed, in sherbert glasses topped with whipped Cream. Makes
6 serving.
