ple turn brown upon exposure
to air. Dip them in lemon
juice to prevent darkening.
Large cubes or wedges of
fresh fruit are much more at-
tractive than finely minced
fruit.
Citrus slices or segments
should be added to a fruit mix-
ture just before serving because
they are likely to lose juice
while standing.
HOLIDAY FRESH
FRUIT SALAD
1 mediumuft sized fresh grape-
fruit
2 medium sized fresh oranges
2 medium sized fresh apples,
unpeeled
2 medium sized fresh pears, un-
peeled
1 package (3 oz.) cream cheese
-I cup chopped nuts
1 head lettuce
Emperor grape clusters
Peel grapefruit and oranges,
being sure to remove all white
portions. Into bowl cut grape-
fruit into sections and oranges
into slices, reserving juice. Cut
apples into slices and add to
citrus fruit and juice. Cutpears
into eighths and remove cores.
Break cream cheese in pieces
and roll to form balls the size
of a marble; roll balls in chop-
ped nuts. Line salad bowl with
leaves and tear remaining let-
tuce into bite-sized pieces;
place in salad bowl. Arrange
fruit and cheese balls as desir-
ed on lettuce. Serve with Fruit
Salad Dressing.
FRUIT SALAD DRESSING
2 eggs, separated
1 tablespoon fresh lemon juice
1/8 teaspoon salt
2 tablespoons sugar
cup fresh orange juice
e cup sugar
4 cup heavy cream
In top part of double boiler
beat egg yolks with lemon juice
and salt. Gradually beat in 2
tablespoons sugar. Slowly heat
orange juice and gradually add
to the egg yolk mixture. Cook
over hot water (not boiling) un-
til thickened, stirring constant-
ly. Beat 2 egg whites until soft
stiff peaks are formed; gradual-
ly beat in a cup sugar and con-
tinue beating until stiff. Fold
into cooked mixture. Chill.
Just before serving whip 4 cup
heavy cream and fold into
dressing. Serve with fruit sal-
ad. Yield: 8 servings.
FRESH APPLE
TANGERINE SALAD
5 fresh tangerines
3 large fresh apples
1 package (8 oz.) cottage
cheese (1 cup)
1. head lettuce
Mayonnaise or French dressing
Pomegranate seeds
Peel tangerines, remove
stringy membranes and separ-
ate into sections. Wash apples
core, cut into eighths and ar-
range on head lettuce on salad
plates with tangerine sections.
Top each salad with cottage
cheese. Sprinkle with pome-
granate seeds. Serve with may-
onnaise or French dressing.
Yield; 6 servings.
FRESH GRAPEFRUIT
AVOCADO SALAD
2 cups fresh grapefruit sections
1 cup grenadine
Salad greens
1 fresh ripe avocado
1 tablespoon fresh lemon juice
French dressing
Combine grapefruit sections
and grenadine. Let stand 1
hour or until sections have ab-
sorbed enough of grenadine to
color them pink. Drain off
juice and grenadine and save
for fruit cups or punch. Arrange
grapefruit sections in wheel
shape on salad greens on indi-
vidual plates. Cut avocado in
half. Remove seeds; cut into
lengthwise slices and dip into
lemon juice to retain color.
Place avocado slices between
grapefruit sections. Serve with
French dressing. Yield: 6 setv,
ings.
