can really do.
BAKED CHICKEN
1 broiler fryer (cut in serving
pieces)
1 small onion (minced)
1 tbsp, minced parsley
2 cups fine bread crumbs
1 tsp. salt
pepper
cup butter (melted)
Method: Combine onion,
parsley, crumbs, cheese, salt
and pepper. Dip pieces of
chicken in melted butter and
roll in crumb mixture. Place
chicken pieces in a baking pan
large enough to hold them with
no overlapping. Sprinkle all
the remaining bread crumb mix-
ture and melted butter over
chicken. Bake at 350 degrees
1 hour. Serves four.
BAKED POTATOES
4 baking potatoes
cup of commercial sour
cream
k cup butter
salt and pepper
2 tsp. minced onion
paprika
Method: Rub skins first with
butter, place in a baking pan
and bake at 450 degrees for 1
hour or at 350 degrees for 14
hours. Cut across top of pota-
toes. Protecting your hand with
a folded towel, squeeze potato
until top puffs out. Scoop out
part of the potato. Mix in a
bowl with the other ingredients
and add this to the potato.

Spoon the potato mix back into
the shells and top with paprika.
Serves 4.
CARROTS & PINEAPPLE
Choose firm, well shaped
carrots and remove skins. Cov-
er and cook in a small amount
of water for 20 minutes. You
may cut these any shape you
wish in rounds or diced.
6 nice sized carrots (diced)
pinch of salt
1 tsp. sugar
4 cup pineapple
tbsp. butter
2 tsp. cornstarch
Method: Add salt, sugar,
pineapple and butter and mix
well with carrots. Dissolve corn-
starch in water and thicken the
carrots and pineapple when
warm. If a little too thick add
more pineapple. Stir over
medium heat until clear.
Serves 6.
JELLIED COLE SLAW
2 envelopes unflavored gelatine
14 cups water
2 tsp. salt
cup lemon juice
tsp. Worcestershire sauce
14 cups mayonnaise
1 tbsp, grated onion
cup chopped pimento
6 cups finely shredded cabbage
Method: Sprinkle gelatine
over water in a saucepan. Place
saucepan over low heat and stir
until gelatine is dissolved. Re-
move from heat and add salt,
lemon juice, Worcestershire
sauce and pepper. Cool. Grad-
ually stir mayonnaise in a bowl.
Fold in remaining ingredients.
Turn mix into 8 individual
molds or a 14 quart mold. Re-
frigerate until firm. Unmoldby
dipping mold into hot water,
then loosening around edge with,
tip of a knife. Place plate on
top of mold and turn upside
down. Garnish with lettuce
leaves. Makes 8 servings.
CHOCOLATE CAKE PIE
3 tbsp. shortening
2/3 cup sugar
2 eggs (separated)
2 tbsp. flour
6 tbsp. cocoa
1 cup milk
1-9" pastry shell (unbaked)
Method: Beat shortening un-
til fluffy and gradually beat in

—Mrs. John Hay of Kitchen-
er spent the week-end with her
sugar. Then beat in egg yolks.
Mix flour and cocoa and stir in-
to egg mixture. Stir in milk.
Beat egg whites until stiff but
not dry. Fold in. Pour into
unbaked shell. Bake at 375 de-
grees for 40 min. Serves 6.

tended an executive meeting of
the Ladies' Provincial Lawn
Bowling Association of Ontario,
of which she is vice-chairman.
—Mr. and Mrs. Andrew
Gaunt of Lucknow, Mrs. Geo.
Deyell, Mr. Jim English and
Mr. and Mrs. Murray Gaunt
and Stephen, all of Wingham
were Sunday dinner guests of
Mr. and Mrs. Norman Deyell
and family after the christening
Members answered the roll
call by telling how and where
they would like to spend their
vacations, Donations were vot-
ed to the Canadian Cancer So-
ciety and the Easter Seal fund
for crippled children.
Plans were made for Anni-
versary Night, May 11. The
club will enjoy a dinner meet-
ing at the Tiger Dunlop Inn at
Goderich and will proceed to
the Ontario Hospital to provide
a social evening for the pa-
tients.
The Kinette Club in Wing-
ham was chartered on May 4,
1950 with Mrs. Norman Heal
as its first president. Other

The Sacred Heart Catholic
Women's League held its month-
ly meeting on Monday with
Mrs. C. Desmarais presiding.
After a short business meet-
ing, the pupils from Sacred
Heart School provided enter-
tainment for the members and
parents.

Freker, former pastor, was en-
joyed by all.
