2 pounds frozen fish fillets. Salt. 1 cup packaged pre-
cooked rice. Y2 cup .hot, water, 'h tsp. salt. 1 can (15-oz,)
pineapple chunks, drained. 1 green pepper, cut into strips,
6 tomato slices, Thaw fillets enough to cut each block into 3 portions.
Season with salt. Combine rice, water and 1/2 tsp. salt, Let
stand a few minutes so rice will absorb water, Tear off 6
rectangles of aluminum foil about 12"x10" and grease light-
ly on Wo inside. Place 3 tbsp, rice in the centre of each;
top with fillet portion; cover with 6 pineapple chunks, a
slice of tomato, and 4 green pepper strips, Bring foil up
over fish and its topping. Double fold, Also double fold
outer edges. Bake at 450° F. about 25 minutes on a baking
sheet. Open one package to see if the fish is cooked. Serve
in the foil wrapping. 8 servings.
