Secrets from the
Blue Barn Kitchen

VEGETABLE, CHICKEN PUFFS
WITIH CHEESE SAUCE
PUFFS
1 cup hulk
1 tsp. salt, pinch pepper
1 cup unsifted flour
2 cup butter
4 eggs
METHOD
Bring milk, butter, salt and
pepper to a boil. Add flour, all
at once, stir until dough will
form a ball, Remove from heat,
Add eggs one at a time, beat-
ing well after each. Drop
dough a cup at a time in 12
mounds on lightly greased bale
ing sheet.
Bake in 375 deg. oven 45
min. or until puffs are golden
brown. Remove from oven.
FILLING
2 tbsp. butter
2 tbsp. water
1 small pkg. frozen peas
1 small pkg. frozen or fresh
celery
2 cups diced cooked chicken
2 tbsp. flour
1 cup or small tin cooked
mushrooms
METHOD
Melt butter in saucepan
over medium heat, stir in
flour then stir in water. Add
frozen vegetables. Cook slowly
over low heat. Stir with a fork
until tender then add chicken
and heat thoroughly.
CHEESE SAUCE
2 tbsp. chopped onion
3 tbsp. flour
1 cup light cream
salt and pepper
3/4 cup c sicken broth
4 tbsp. butter
1 cup grated sharp or medium
cheese
METHOD
Saute onions lightly in but-
ter (clear only). Stir in flour,
salt and pepper. Blend in
cream and broth. Add cheese
until melted.
Slice top off each puff and
spoon in chicken filling. Re-
place tops. Place on heated
serving platter and garnish
with whole spiced crabapples
or apple rings and parsley.
Serve cheese sauce separate
ly when serving. A spring toss-
ed salad and new boiled pota-
toes go well with this lunch-
eon,
GLAZED PEACH CAKE
2 cup butter
1 egg
1-1/3 cup all purpose sifted
flour
21 cups frozen sliced peaches
(thawed)
3/4 cup apricot, or crabapple
jelly
2 cup sugar
1 tsp. grated lemon rind
1 tbsp. quick cooking tapioca
1 tbsp, softened butter whipped
cream
METHOD
Cream butter until soft. Add
sugar and cream until light.
Add egg and lemon rind, mix
thoroughly. Blend in flour.
Place dough on floured wax
paper. Pat into an 8" circle,
Chill 2 hour, will be easier to
handle,
Place dough in greased 9"
layer cake pan. Pat dough to
edge of pan. Bake in 375 deg.
oven for 20 min.
Remove from oven, sprinkle
tapioca evenly over top. Drain
peaches. Arrange over top of
cake in an attractive pattern.
Dot with softened butter. Re-
turn to oven for 10 min. Heat
the jam until soft and runny.
Remove the cake from oven
and spread over peaches. Re-
turn to oven and bake 10 min.

ed. Remove from oven. Cool.
Serve warm or cooled with
whipped cream. Makes 6 to 8
servings.
A SPRING SALAD
Chopped cabbage and apple,
sour cream dressing; sprinkle
with celery seed and chopped
walnuts.

Stir in 1/3 cup peanut but-
ter for every two cups of muf-
fin batter to make peanut muf-
fins.

Mrs. Connell Installed As
Presicent of 3 & PW
The June meeting of the
Business and Professional Wo-
men's Club was held in the
United Church, with President
Mrs.John Ostrom in the chair.
In a few well-chosen words,
Mrs. Ostrom expressed the sor-
row of the members and person-
al loss suffered in the sudden
passing of Miss Phyllis Johns, a
valued and well -loved membea
The installation of officers
for 1965-66 was conducted by
Mrs. Elvira Baillie, of Walker-
ton, regional advisor, The fol-
lowing slate of officers was
submitted by the nominating
committee:
Past president, Mrs. John
Ostrom; president, Mrs. Daisy
Connell; first vice-president,
Mrs. Robert Ahara; second vice-
president, Mrs.John Crewson;
corresponding secretary, Mrs,
George Scott; recording secre-
tary, Mrs, Stewart Scott; treas-
urer, Mrs, Cliff Robb. These
officers were duly installed in
a candle -lighting ceremonial.
The retiring president was
presented with a past -president's
pin and other gifts by Miss
Yvonne McPherson. Mrs. J.
Alexander presented Mrs. Bail-
lie with a gift.
Plans were discussed for the
Regional Conference to be held
in Wingham an September 19,
when five neighboring clubs
will attend.
There will be a bus trip to
the Stratford Festival on July 7,
to see the performance of The
Marriage of Figaro at the Avon
Theatre.

We are very upset.
Recently we bought a para-
keet. The man in the pet shop
said the parakeet was a male.
Well, last week 'Bob" laid an
egg.
A friend of ours who has para.4
keets told 'us the male birds have
little blue circles around the
beak and the female binds are
light tan in that area. Bob had
blue circles when we bought him
but the blue seems to be turning
brown,
Is it possible that birds change
sex? Do some male birds lay
eggs? Please give us some an-

Dear Ann Landers: My grand-
mother is a lovely person but she
is getting very old and forget-
ful. Sometimes her mind is sharp
as a tack and then again she
goes off into the past and it's
hard to talk to her.
Grandma has told me at least
100 times that she is going to
leave me her gold earrings and
her +fur cape. To be truthful,
Ann, I don't want her earrings
because they are for pierced
ears. The cape is 15 years old.
Grandma wore it to my sister's
wedding five years ago and it
was pretty ratty then.
What I would really like is
money — and Grandma has
plenty, How can I get across
to her (without looking grabby)

Vows
White mums and pink snap-
dragons decorated Knox Presby-
terian Church, Teeswater, for
the double -ring ceremony per-
formed by Rev, T, McKinney,
uniting in marriage Gayle Elea-
nor Donaldson of Teeswater and
Monrad Edwin Kjorlien of
Mount Robson, B.C.
The bride is the daughter of
Mr. and Mrs, James Donaldson
of R. R.1 Formosa and the
groom is the son of Mr, and Mrs.
Clarence Kjorlien of Camrose,
Alta,
Mrs, R. H, King was the or-
ganist and John Halliday of
Teeswater sang "Wedding Day"
and "The Lord's Prayer".
Mr. Donaldson gave his dau-
ghter in marriage. She wore a
floor -length gown of chiffon
lace over satin with lace in-
serts in the skirt and seed pearl
trim. Her elbow -length veil
was held by a tiara of crystals
and seed pearls and she carried
a bouquet of pink carnations
with trailing ivy.
Miss Marjorie Schnurr of
Teeswater and Miss Lynne Sum
merbell of Ottawa were her at-
tendants. Miss Schnurr, as
maid of honor, wore a street -
length turquoise chiffon gown
and Miss Summerbell's dress
was pink chiffon. They carried
white mums.
Bruce Donaldson was best
man and the ushers were Tom
Christie and Gerald Baptist, all
of Teeswater.
Guests were received in the
church parlor. The bride's mo-
ther wore a turquoise Terylene
silk dress, black hat and acces-
sories and the groom's mother
chose pink lace, with white
hat and accessories. Pink and
white flowers and pink candles
decorated the tables. Tele-
grams of congratulations were
read.
Mr. and Mrs. Kjorlien left by
motor for their home at Mt.
Robson, through Northern Ont-
ario and Jasper National Park.
The bride chose an off-white
suit, wide brimmed pink hat,
pink gloves and black leather
shoes and bag.
The bride is a graduate of
Lougheed Business College and
the groom attended the Univer-
sity of Alaska College.
Mrs. M. L. Baptist, who is 86,
was a guest at the wedding.

graduated from St. Thomas-
Eigin General Hospital School
of Nursing Wednesday of last
week. Graduation exercises
were held at Alma College, St.
