potatoes. Preservatives are added to
maintain freshness in the supermarket.
Antioxidants are added to keep potato
chips from going rancid.
Some of the most common
additives are preservatives. Sodium
nitrates and nitrites are found in
smoked meat products and processed
meat. These chemicals can turn into
nitrous acid, which can cause cancer,
liver damage, and genetic mutations in
experimental animals.
Dried fruits and molasses are usu-
ally preserved with sulphur dioxide,
which can cover up an inferior quality
in food but at the same time destroys
Vitamin B1. Allergic reactions to this
chemical include nausea, headache,
fatigue, the destruction of blood
corpuscles, and an inflammation of
the mucous membranes of the mouth.
Margarine, fruit juices, and
carbonated beverages can contain
benzoic acid and/or sodium benzoate
as preservatives. Flour, cheese, bread,
and mayonnaise can contain sorbic
acid and/or potassium sorbate. Each
chemical additive has certain effects,
whether long-term or short-term,
minor or major, by itself or combined
with other ingested chemicals.
Antioxidants, another additive
group, prevent fatty foods from
spoiling and becoming rancid. This
group also prevents the discolouration
of foods high in carbohydrates. BHT
(butylated hydroxytolucne) and BHA
(butylated hydroxyanisole) are the
most common antioxidant preserva-
tives. They are found in many types
of processed food.
In experiments with laboratory
animals, the chemicals in BHT and
BHA can cause weight loss, liver
damage, baldness, fetal abnormalities,
and stunted growth. An allergy to
these chemicals can produce skin
blisters, extreme weakness, tingling
sensations on the face and hands, and
difficulty with breathing. In 1974,
these two chemical combinations were
banned as food additives in Australia,
Sweden, Romania, and Great Britain.
They are still used in Canada and the
U.S.
Monosodium glutamate, or MSG,
is another common food additive. It is
the most widely used flavour -enhan-
