Elderberry Pie Topping
1/4 cup margarine or butter
1/2 cup sugar
1/2 cup flour
Cook berries gently until tender (5
minutes) with sugar and lemon and
cornstarch mixture.
Peel and slice three apples (any
favourite variety). Gently fold into the
elderberries and then pour into the pie
shell.
Cover with the topping and
sprinkle of cinnamon and bake 35
minutes at 350°.
Elderberry Jam
Elderberry jam is somewhere
between a blueberry and black currant
in flavour. This recipe is from New
Zealand, where they do not use thick-
ening agents like our pectin products.
When we were there a few years ago
I had to learn to make jams the old-
fashioned way.
1 pound elderberries, washed and
stems removed
1 pound sugar
juice of one lemon
Crush berries in a saucepan and
simmer gently until soft. Add sugar
and stir well until dissolved. Add
lemon juice and boil rapidly until
setting point is reached.0

1/2 cup ammonia
1/2 cup vinegar
1/4 cup baking soda
1/2 gallon water
