11-14 —42nd Annual Reciprocal Meat
Conference, sponsored by the American
Meat Science Association, University
of Guelph. This is the first time in 42
years that the conference is to be held
outside the U.S. Overview, issues, and
perspectives on the international meat
trade will be presented. Additional
programs will include discussions of
collagen, meat composition and quality
evaluation, somatotropin effects on
growth and gene expression, animal by-
product utilization, modified atmos-
phere packaging, and the omega -three
fatty acid story. Workshops will dem-
onstrate computer software and show
the use of computerized sensory evalu-
