Townsman, 1991-11, Page 23Don't use method of Proverbs 23.14 but follow the standard method of mixing a cake. Bake a 350 degrees for between 30 to 45 minutes (check in between these times). This recipe is one-half the size of the original recipe, which was borrowed from an early Cana- dian cookbook entitled, The Cook Not Mad, Or, Rational Cookery of 1831. It will fill a 23 cm. (9") square cake pan or 2 - 23 cm. (9") x 10 cm. (4") loaf pans. Except for the sub- stitution of baking soda for the pearlash, the recipe is unaltered from the original. Cream: 125 ml. (1 cup) molasses to the butter and sugar. Sift together: 750 ml. (3 cups) white flour 5 ml. (1 tsp.) baking soda 10 ml. (2 tsp.) powdered ginger 10 ml. (2 tsp.) cinnamon 5 ml. (1 tsp.) nutmeg Add: sifted ingredients to the wet mixture alternately with 180 ml. (3/4 cup) milk Add: 250 ml. (1 cup) currants Fold in: beaten egg whites Turn into: greased pans Bake: in a moderate oven 180 degrees C. (350 degrees F.) for 1 hour or until a toothpick inserted in centre comes out clean. EDIBLE WREATH 1/2 cup butter 1 pkg. marshmallows (coloured) 6 cups of Corn Flakes Red and green glace cherries Sliced almonds Melt butter in saucepan (3 qt. size). Add marshmallows, cook over low heat, stirring constantly, until marshmallows are melted. Remove from heat. Add corn flakes, stir until marsh- mallows are blended well. Pour mixture out on to a greased sheet or tray with buttered fingers, shape into wreath. Decorated with red and green cherries and sliced almonds. Looks nice on round cookie or pizza tray covered with coloured foil. Sprinkle coconut in centre or place candies in centre. Approx. time, 20 minutes. —Mary Ellen Lynn Goderich.
