MEAT HAS NEW
COMPETITOR
A new food is giving traditional
meat dishes competition in Britain.
The product, a myco-protein (myco
means fungus), is marketed under the
brand name Quorn. It is a fu well
known to farmers as "fusarium mold,"
which causes toxin growth in grains.
Fusarium contains almost 45 per
cent protein on a dry matter basis, only
13.8 per cent fat, and 38 per cent dietary
fibre. As a bonus, Quorn has a meaty
taste and texture. The first "meat" pie
made from Quom was marketed in
1985, and more products are planned.0
