APPLE HARVEST
Corn -Apple Muffins
1 1/4 cups sifted all-purpose flour
2 T sugar
4 t baking powder
1/2 t baking soda
1 t salt
3/4 cup yellow corn meal
1 egg
2/3 cup buttermilk
3/4 cup applesauce
1/3 cup cooking oil
Sift flour, sugar, baking powder,
baking soda, and salt. Combine with
corn meal. Beat egg, add buttermilk,
applesause, and cooking oil.
Add to dry ingredients and stir
quickly until mixed but still lumpy. Fill
greased muffin tins two-thirds full.
Bake about 20 minutes at 425 degrees F.

Amber Apple Desert
Filling:
5 cups pared, cored, sliced apples
(7 medium)
1/4 cup sugar
2 T flour
1/4 to 1/2 t cinnamon
1/4 t salt
1 t vanilla
1/4 cup water
Topping:
1/2 cup flour
1/2 cup sugar
1/2 t baking powder
1/4 t salt
1 egg
1 T melted butter
Toss apples with combined sugar,
flour, cinnamon, and salt. Combine
vanilla and water, add to apples, toss.
Turn into an 8 x 8 x 2 inch baking pan.
Mix dry ingredients for topping. Beat
egg lightly, combine with cooled melted
butter. Add to dry ingredients, mix with
a fork until just dampened. Spoon
mixture onto apples in 9 portions. Bake
at 375 degrees F for 35 to 40 minutes.
Serve warm.0
There are about 3 medium apples in a
pound, about 5 pounds in a 4 -quart bas-
ket, and about 7 pounds in a 6 -quart
basket.
