PEACH CHUTNEY
Peach Chutney is a simply made
dish that adds flair to meals and is par-
ticularly good with grilled pork chops.
Ingredients:
1.5 L peeled chopped peaches (about
1.3 kg)
250 rnL vinegar
25 mL mustard seed
500 nil. brown sugar
125 mL chopped sweet red pepper
50 mL chopped onion
15 mL finely chopped ginger root
Cook the peaches in vinegar until tender
(about 7 minutes). Tie the mustard seed
in a cheesecloth bag. Add to peaches
with remaining ingredients. Bring to
boil and cook until slightly thick (about
1 hour), stirring frequently. Pour into
hot sterilized jars and seal. Makes 1
litre.0
