BLAINE'S BREAD
Cold weather and baking bread go
together, says Blaine Stephenson,
Ontario Federation of Agriculture field -
man for Huron and Perth counties.
Stephenson learned to cook "to
survive" when fending for himself
during the forestry course he took at
Sir Sandford Fleming in Lindsay more
than nine years ago. Now that he's
back on the farm in Stanley Township
and working 90 acres with his brother,
Bill, he says that he continues to make
Sunday breakfast for his wife, Leisa,
and their children: Michael, 6, Cara,
4, and Leanne, 20 months.
Stephenson has been fieldman for
five years and works closely with the
county federations to promote the
organization, deal with problems, and
sign up new members. He has been
working on recruiting associate mem-
bers — co-ops, feed companies, fuel
companies, and other businesses that
depend on agriculture's survival.
Back to basics: what are the
secrets of good bread? Stephenson
says they're fresh yeast., the right
amount of kneading, and a pioneer
spirit.
RECIPE
(Yields two loaves)
1 cup lukewarm water
2 T. yeast
1 L sugar
Let stand 10 minutes.
