remaining frosting; frost remaining
cupcakes. Arrange 6 cupcakes in tree
shape above each trunk cupcake.
Decorate as desired with shoestring
licorice and candies.
BUTTER CRISP ROSETTES
1 cup (250 mL) butter, softened
1 1/2 cups (375 mL) icing sugar
2 tsp (10 mL) vanilla
1/2 tsp (2 mL) salt
1 egg
2 cups (500 mL) all purpose flour
chocolate chips
In large mixer bowl, cream butter
and sugar until Tight. Beat in vanilla
and salt. Add egg and beat well.
Blend in flour.
Place dough in large pastry bag
fitted with open -star 3/4 -inch (18
mm) diameter decorating tip. filling
bag half full at a time. Pipe dough
into 1 1/2 -inch (4 cm) diameter
cookies, 2 inches (5 cm) apart on
ungreased baking sheets. Top centre
of each cookie with chocolate chips.
Bake in 375°F (190°C) oven 8-10
minutes or until the edges of the
cookies are golden. Do not overbake.
Remove from sheets; cool on wire
racks.
MINCEMEAT CUSTARD TARTS
24 3 -inch (8 cm) tart shells
1 cup (250 mL) mincemeat
2 eggs
I can (385 mL) evaporated milk
1/3 cup (75 mL) granulated sugar
I tsp (5 ml) vanilla
1/4 tsp (1 mL) each, salt, ground
nutmeg. cinnamon.
green and/or red maraschino
cherries (optional)
Place tart shells on baking sheet.
Spoon mincemeat evenly into tart
shells. pressing onto bottom; set
aside. In bowl, beat together eggs,
evaporated milk, sugar, vanilla, salt,
nutmeg and cinnamon. Pour gently
over mincemeat.
Bake in 425°F (220°C) oven for 5
minutes. Reduce heat to 350°F
(I80°C); bake for 15-20 minutes or
until filling is just set. Let cool on
rack. Garnish with cherries if desired.
• Serve warm or cold.
Tarts can be refrigerated in airtight
container for up to 3 days.

3 eggs, lightly beaten
1 cup (250 mL) corn syrup
1 cup (250 mL) sugar
2 tbsp (30 mL) butter, melted
1 tsp (5 mL) vanilla
