2 cups (500 mL) coarsely chopped,
peeled apples
no stick cooking spray
1 tbsp (15 mL) granulated sugar
1/2 tsp (2 mL) cinnamon
In large bowl, combine flour, corn
starch, baking powder, salt and
cinnamon.
In small bowl, whisk egg whites,
sugar, milk, corn syrup, and vanilla
together to blend well. Add liquid
mixture to dry ingredients, whisking
until smooth. Stir in apples.

square cake pan sprayed with cooking
spray. Sprinkle with mixture of sugar
and cinnamon.
Bake in preheated oven 350°F
(180°C) 45 minutes or until toothpick
inserted in centre comes out clean.
Cool in pan on wire rack.
BANANA RAISIN LOAF
1 3/4 cups (425 mL) all purpose
flour
1 1/4 tsp (6 mL) baking soda
1 tsp (5 mL) baking powder
1/4 tsp (1 mL) salt
4 egg whites
3/4 cup (175 mL) granulated sugar
1 1/2 cups (375 mL) mashed
bananas (3 Targe)
1/2 cup (125 mL) sour skim milk
1/4 cup (50 mL) corn syrup
3/4 cup (175 mL) raisins (optional)
no stick cooking spray
In large bowl, combine flour,
baking soda, baking powder and salt.
In small bowl, whisk egg whites,
sugar, bananas, milk and corn syrup
together to blend well. Add liquids to
dry ingredients, whisking until
smooth. Stir in raisins.
Spread batter in 9"x 5" (2L) loaf
pan sprayed with cooking spray. Bake
in preheated 350°F (I80°C) oven 50-
55 minutes, or until toothpick inserted
in centre comes out clean. .Cool on
wire rack 10 minutes.
Remove from pan; cool
completely.
* To sour milk, put 1 1/2 tsp (7
mL) lemon juice or vinegar in
measuring cup. Add skim milk to 1/2
cup (125 mL) measure.
TIPS
• You can use a whole egg instead
of just egg white, but the yolk adds
about 5 grams of fat and 215 mg of
cholesterol to the recipe.
• While there's no difference in
appearance, fat free baked goods have
a more intense taste, a slightly moister
and courser texture and are slightly
more perishable than regular baked
goods.
• One tablespoon of com syrup has
no fat and only 48 calories compared
with 13 grams of fat and 117 calories
per tablespoon of shortening. Corn
syrup is less sweet than granulated
sugar with 48 calories per tablespoon
while an equal amount of sugar has 50
calories.0
