The Rural Voice, 1998-07, Page 39ORIENTAL PEACH -PORK AND PASTA SALAD 1 1/2 cups (375 mL) pasta shells 2 cups (500 mL) broccoli florets 2 cups (500 mL) thinly sliced carrots 1 lb (500 g) cooked cold roast pork, slivered 1 can (284 mL) sliced water chestnuts, drained 5 peaches Dressing: 1/3 cup (75 mL) rice vinegar 1/4 cup (50 mL) soy sauce 3 tbsp (50 mL) peanut oil 1 tsp (5 mL) sesame oil 1 tbsp (15 mL) grated gingerroot 1 clove garlic, mashed 1/4 tsp (1 mL) granulated sugar 1/4 tsp (1 mL) pepper Cook pasta according to manufacturer's direction or until al dente (tender, but firm); drain and set aside. Blanch broccoli and carrots in boiling water for 3 minutes or until crisp -tender; drain and refresh with cold water. Combine pasta, pork, broccoli, carrots and water chestnuts in Targe bowl. Peel and slice peaches; add to salad mixture. Dressing: In tightly sealed container, shake together vinegar, soy sauce, peanut oil, sesame oil, gingerroot, garlic, sugar and pepper. Pour over salad; toss well. Cover and refrigerate for about 30 minutes to allow flavours to blend.
