While it's possible to sell
garlic through the Toronto
Food Terminal, where it
will compete with the
imported garlic Ham figures there's
no need to do that. All the leg work
he's done in the last couple of years
in visiting restaurants and retailers
will pay off, he says. People are
willing to by-pass cheaper Chinese
garlic for the larger, better quality
bulbs. "The type and quality (of
garlic) we have, if you bring it to the
right market, it's possible to sell it at
a premium price."
But this is no get -rich -easy
scheme. Jack Christie says there's a
lot of work, "maybe more than I
anticipated", in growing garlic. The
lure of higher profits, however, is
causing rapid growth in farming
garlic with growers from Barrie to
the southwest taking on the new
crop. Like the partners in Flat Creek
Farms, these farmers are banking
they can prove Canadian garlic is
