flavour variations.
CASHEW BUT'L'ER CRUNCH
1 cup sugar
1 cup butter
1 tbsp light corn syrup
1 1/2 cups salted cashew pieces
In 2 quart saucepan combine sugar,
butter and corn syrup. Cook over low
heat, stirring occasionally, until candy
thermometer reaches 290°F or small
amount of mixture dropped into ice
water forms brittle strands (25 to 30
minutes).
Remove from heat; stir in cashews.
Spread to 1/4 inch thickness on waxed
paper lined 15x 10x l inch jelly roll pan.
Cool completely; break into pieces.
Tip: 1 1/2 cups of your favourite
salted nuts can be substituted for
cashew pieces.
CARAMEL PEANUT BALLS
3 cups finely chopped dry -roasted
peanuts
1 (14 ox) can sweetened condensed
milk
1 tsp vanilla extract
1/2 pound chocolate confectioners'
coating*.
In heavy saucepan, combine
peanuts, condensed milk and vanilla.
Over medium heat, cook and stir 8 to
10 minutes or until mixture forms ball
around spoon and pulls away from
side of pan._
Cool 10 minutes. Chill if desired.
Shape into 1 -inch balls. In small
heavy saucepan, over low heat, melt
confectioners' coating. With wooden
pick, dip each ball into melted coating,
not covering completely. Place on
waxed paper lined baking sheets until
firm. Store covered at room
temperature or in refrigerator.
*Chocolate confectioners coating
can be purchased in candy specialty
stores.
WHITE TRUFFLES
2 pounds white confectioners'
coating*
1 (14 oz) can sweetened condensed
milk
1 tbsp vanilla extract
1 pound dark chocolate
confectioners coating*, melted, or
unsweetened cocoa.
In heavy saucepan, over low heat,

melt white confectioners' coating with
sweetened condensed milk. Remove
from heat; stir in vanilla. Cool. Shape
into 1 inch balls. With wooden pick,
partially dip each ball into melted
chocolate confectioners' coating or roll
in cocoa. Place on waxed paper -lined
baking sheets until firm. Store covered
at room temperature or in refrigerator.
Microwave: In 2 quart glass
measure, combine white confectioners'
coating and sweetened condensed
milk. Cook on HIGH 3 to 3 1/2
minutes or until coating melts, stirring
after 11/2 minutes. Stir until smooth.
Proceed as above.
*Confectioners' coatings can be
purchased in candy specialty stores.
PASTEL COATED COCOA
BONBONS
2 pkgs. (3 oz each) cream cheese,
softened
2 cups powdered sugar
1/2 cup cocoa
2 tbsp butter, melted
1 tsp vanilla extract
pastel coating*
In small mixer bowl beat cream
cheese. Add powdered sugar, cocoa,
butter and vanilla; blend well. Cover,
refrigerate several hours or until firm
enough to handle.
Place wax paper on tray. Shape
mixture into 1 -inch balls; place on
prepared tray. Refrigerate, uncovered,
3 to 4 hours or until dry.
Before coating, place in freezer
about 10 minutes. Using fork, dip cold
centres into very warm pastel coating.
Stir coating before dipping each
bonbon. Gently tap fork on side of
bowl to remove excess coating.
Quickly remove. Place on wax paper
covered tray.
For decorative top, drizzle small
amount coating over top of bonbon.
Refrigerate until firm. Store in airtight
container in refrigerator.
*Pastel Coating:
6 tbsp butter
3 cups powdered sugar
1/4 cup milk
1 tsp vanilla extract
red, green or yellow food colour
In medium microwave safe bowl,
combine butter, powdered sugar, milk
and vanilla. Microwave at HIGH 1 to
2 minutes or until smooth when
stirred. Add several drops desired food
colour to tint mixture pastel pink,
green or yellow.°
