The Rural Voice, 1994-02, Page 351 cup (250 ml) sliced mushrooms 2 cups (500 ml) halved snow peas 3/4 cup (175 ml) water 1 tbsp (15 ml) chicken bouillon concentrate 2 tbsp (25 ml) corn starch 1 tbsp (15 ml) soy sauce In large skillet or wok heat corn oil over medium-high heat. Stir fry chicken and ginger until chicken is no longer pink. Add onions, pepper, mushrooms and snow peas; stir fry two to three minutes. Combine water, bouillon, corn starch and soy sauce until smooth; stir into vegetable mixture. Bring to a boil, stirring constantly. Boil one minute to thicken. TERIYAKI CHICKEN WONTONS 1/21b (250 g) skinless, boneless chicken breasts, cooked, finely chopped 1/4 cup (50 ml) finely chopped water chestnuts 1/4 cup (50 ml) finely chopped celery 1/4 cup (50 ml) finely chopped mushrooms 1/4 cup (50 ml) finely chopped almonds 1/4 cup (50 ml) teriyaki sauce 30-36 wonton wrappers 4 cups (1 1) corn oil In bowl mix together chicken, water chestnuts, celery, mushrooms, almonds and teriyaki sauce. Cover; refrigerate two hours. Place 2 tsp (10 ml) chicken mixture on each wonton wrapper. Moisten edges with water. Fold in half to form a triangle. Seal edges well. Pour corn oil into heavy 3 quart (3 I) saucepan or deep fat fryer. Heat to 375°F (190°C). Add wontons, a few ata time. Fry two to three minutes or until golden, turning once. Drain on paper towels. Serve with sweet and sour sauce. Sweet and sour sauce: In small saucepan combine 4 tsp (20 ml) corn starch and 2 tbsp (25 ml) water until smooth. Stir in 1/2 cup (125 ml) golden corn syrup, 1/4 cup (50 ml) vinegar, 1/4 cup (50 ml) pineapple juice, 2 tbsp (15 ml) soy sauce. Bring to a boil, stirring constantly over medium heat and boil one minute to thicken. Cool and serve as a dipping sauce.0 '11!wI1a111.
