BRAISED SHORT RIBS 3 Ib beef short ribs, cut into service -size pieces 3/4 cup uncooked long -grain rice 1/2 cup chopped onion 1/2 cup chopped celery 1/4 cup chopped green pepper 2 tsp beef -flavoured gravy base 1 tsp Worcestershire sauce 1/4 tsp dried thyme, crushed Brown ribs, 25 to 30 minutes on all sides in skillet. Season with salt. Place in 3 quart casserole. Cover; bake at 325° for one hour. Using same skillet, combine rice and vegetables; cook till rice is lightly browned. Remove ribs from oven after baking for one hour; drain. Remove ribs from casserole. Place rice mixture in casserole; top with ribs. Combine remaining ingredients, 2 1/4 cups water, 2 tsp salt and 1/8 tsp pepper in saucepan; bring to boil. Pour over ribs. Cover; bake one hour more. STEAK DIANE With meat mallet pound 4 beef sirloin strip steaks, cut 1/2 inch thick 1 tsp dry mustard 4 tbsp butter or margarine 3 tbsp lemon juice 2 tsp snipped chives 1 tsp Worcestershire sauce With meat mallet pounds steaks to 1/3 inch thickness. Sprinkle one side with salt, freshly ground black pepper and 1/8 tsp dry mustard; pound into meat. Repeat with other side. Heat skillet, then add butter or margarine. When melted, add two steaks and cook 2 minutes on each side. Transfer meat to hot serving plate. Repeat for remaining meat. To skillet add lemon juice, chives and Worcestershire sauce; bring to boil.
