and a good source of iron
Bruce County, home of this
year's International Plowing Match,
is the beef capital of Ontario. Long
a favourite with Canadians, beef is
one of the best sources of readily
available iron — iron that is
absorbed more easily than iron from
vegetables, cereals and supple-
ments.
Also beef today is leaner, similar
in fat and calorie content to roast
chicken, even without the skin.
It's all a good reason to give an
old favourite another try.

PIZZA STEAK ON A BUN
4 minute steaks
1/2 tsp (2 ml) oregano
1 - 8 oz. (213 ml) jar pizza sauce
1 medium onion, cut into rings
1/2 cup (125 ml) sliced
mushrooms, fresh or canned
mozzarella cheese, shredded
2 kaiser buns, cut in half and
buttered
Sprinkle steaks with oregano.
Broil to desired doneness. Top with
pizza sauce, onion rings and
mushrooms; broil one minute more.
Generously sprinkle with mozzarella
and place under broiler to melt. Serve
on buttered bun.
BEEF MEDALLIONS WITH
GREEN NOODLES AND BLUE
CHEESE
4 rib -eye or eye of round steaks
about 1/2-3/4" (1-2 cm) thick
freshly ground pepper
4 cups (1 L) green fettuccine
noodles
Orient Express is a tasty
stir fry using left -over
roast beef
1 cup (250 ml) low-
fat plain yogurt
1/2 cup (125 ml)
crumbled blue cheese
Cook noodles
according to package
directions, timing to
have ready at same time
as meat. Roll meat in
freshly ground pepper, covering all
sides well. Broil for 3-4 minutes per
side. Do not overcook.
Combine yogurt and blue cheese,
mixing well.
To serve, arrange noodles on
warmed plates. Top with steak and
spoon cold sauce over top.
ORIENT EXPRESS
1/4 cup (50 ml) soya sauce
1/4 cup (50 ml) rice wine or sherry
1 tsp (5 ml) sugar
2 cups (500 ml) rare roast beef
strips
2 tbsp (25 ml) oil
2 medium carrots, thinly sliced on
the diagonal
1 onion, sliced
1 cup (250 ml) sliced mushrooms
1 tbsp (15 ml) cornstarch
2 tbsp (25 ml) water or beef stock
1 cup (250 ml) snow peas
1 cup (250 ml) bean sprouts
1/2 cup (125 ml) water chestnuts,
sliced
Combine soya sauce, wine or
sherry and sugar; pour over beef. Set
aside.
Heat oil in wok. Stir fry carrots,
onion and mushrooms for 2 minutes.
Mix cornstarch with water; stir
into beef mixture. Add beef mixture,
snow peas, bean sprouts and water
chestnuts to wok. Stir fry about 2
minutes or until sauce thickens. Serve
immediately over rice.
