Life today for most people is so
fast -paced that our opinions are often
based on perception rather than fact.
Some of us take time to read, but for
many of us our ideas are formed from
hastily -skimmed articles, newspaper
editorials, T.V. talk shows, and casual
conversations. It is rare that we get
the chance to investigate an idea thor-

oughly to see whether it is true or not.
Take food for example: just
recently I watched a T.V. program as
a fitness/diet "expert" talked about an
ideal diet based on fruit, vegetables,
cereals, limited dairy products, and —.
you guessed it — small amounts of
meat, but only fish or chicken.
Concerning the meat part of the diet,
there was no explanation of why pork
was taboo. I guess it was just
assumed that it is fatter and is higher

in cholesterol. The fact is a 90 gram
skinless chicken breast has three
grams of fat and 76.4 milligrams of
cholesterol. 90 grams of trimmed
pork tenderloin has four grams of fat
and 61.7 mg. cholesterol. (Source —
Canadian Nutrient File 1991) I am
not running down chicken, but pork is
a flavourful, excellent alternative for
diet -conscious Canadians. And it has
so many positives: high-quality
protein, iron, thiamin, zinc, riboflavin,
vitamin B12 and niacin.
Doctors can be some of the worst
offenders when it comes to handing
out ill-founded advice. This is bad
news because a U.S. Live Stock and
Meat Board study revealed that 95 per
cent of patients said information from
physicians has a high level of
influence on their diet selection. We
need desperately to get up-to-date
nutritional information into doctors'
hands. A 1960s perception of pork,
which some still have, is just not
accurate. I feel that our pork board
has been moving in exactly the right
direction in targeting doctors' offices
for mailings of nutritional
information.

from Stratford has been hired and is
presently taking some training for the
