served with a head on it.
He aims for quality. Your trout
has to be so good that you can't ruin
it by cooking, he quipped. You can
tell a good trout from the clarity of
the eye and the tightness of the
scales. Donelda has her own recipes
for cooking trout as well as those
from the Ontario Ministry of
Agriculture and Food.
Now that Donelda is retiring from
teaching school, and their children
are finished university, the Charters
concentrate on trout farming. Since
he has rented his cash crop farm near
Blyth, they spend all their time at
Alps Creek. They moved into the
1856 log house this winter. At first,
trout farming was a hobby, but it got
very expensive. When he first
invested in aquaculture, he was
impressed with the feed conversion
rate described in an article about trout
farming.

Alps Creek is surrounded by
some of the best land in
Culross Township. Even so,
Charter says a farmer now
must often have an outside job. He
recalled the days at the turn of the
century when many large brick
houses were built with "wheat
money", when every small
community could export their wheat
overseas. "You cannot even make a
living now, let alone build
something," he says.
Charter feels that others can be as
successful as he is at farming fish.
Many other varieties of fish are now
allowed to be raised in captivity by
the Ministry for hatcheries, farms and
fisheries.0
