1 cup (250 ml) tea leaves or 24 tea
bags
1/4 cup (50 ml) ground almonds
1/2 vanilla bean, finely chopped
1/2 tsp (2 ml) almond extract
Combine ground almonds, vagjlla
bean and almond extract; mix well.
Toss mixture with tea leaves and
place in an airtight container.
If using tea bags, combine ground
almonds, vanilla bean and almond
extract until well blended. Spoon over
tea bags in a sealable plastic bag and
shake well to distribute. Store in bag
until giving, then transfer to an
attractive airtight container.
Enough for 48 cups tea.
MULLED MIX
Make a sachet of fragrant spices to
give as the makings of a warmed
mulled drink. Add some favourite tea
bags and a bottle of cider.
1 cinnamon stick
1 whole nutmeg
10 juniper berries
5 whole cloves
4 cardomom pods
2 tsp (10 ml) dried orange peel
Place cinnamon stick and nutmeg
in a heavy plastic bag. Smash with a
meat mallet or other heavy object to
crush. Combine with remaining
ingredients in a spice bag, made from
a square of muslin or triple -thick
layers of cheesecloth. Tie tightly
with kitchen string. Makes 1 bag of
mix.
Attach these instructions to the
gift. Combine 2 cups (500 ml) apple
cider or juice and 2 cups (500 ml)
brewed tea in a medium saucepan.
Add spice bag and bring mixture to a
boil. Reduce heat and simmer for 10
minutes. Taste and sweeten with
brown sugar or honey as desired.
Ladle into mugs and garnish with
lemon slices. Cinnamon sticks make
great stirrers.

1 cup (250 ml) icing sugar, divided
1 1/4 cups (300 ml) shelled
walnuts, toasted
2 tbsp (30 ml) instant coffee
granules, crushed, divided
2 tbsp (30 ml) golden corn syrup
