Ham has also turned to organic
methods using propane torches to kill
weeds in the crop and spraying
broad -leaf weeds with vinegar. But
even there, he says, the odds stacked
against farmers were evident. Pleased
with the efficacy of vinegar he called
up a company to see about bulk
buying. The person who answered
the phone asked if the wanted to
speak to the food or the agricultural
divisions of the company. He chose
the agricultural division and was
given a wholesale price for vinegar.
On a hunch he called the industrial
food division. "The same product
was 20 per cent of what they were
charging the farmer."
The entry of organic Chinese
garlic into the North American
market remains a concern. The big
organic chains in the U.S. have
moved to picking up Chinese organic
product. "It's (organic) not the
answer we thought it was," he says.
Still, Ham sees hope for those
who are victims of the current trend
of not caring if there is Canadian
food production at all. "I see that as
the population begins to question
where its food is coming from and
make connections with what's in
their food and when we make the
connection how vulnerable we are
not to support our local agriculture
and what the costs are for
transportation -- I think that as that
understanding becomes more wide-
spread, I think more crops like this
will be possible. I think people are
beginning to understand that the
emperor doesn't have any clothes. I
think that in time that the direction
that we're headed right now will
slow down."
If the price of garlic was at $1.25
in Canada there would be an industry
that could supply Canadian needs
within 10 years," he says.
Meanwhile, the Canadian
government has expedited a review
of the Canadian trade tribunal
findings ahead of schedule and Ham
says garlic growers have no money to
defend themselves so see little hope
they'll be protected by the federal
government. Still, reduced as they are
to niches, the remaining garlic
growers will continue to seek out the
niche markets that keep a small
Ontario garlic industry alive.0
