comments that in France there are
also tourtieres in country cooking
made variously with veal, pigeon,
turkey, rabbits and pork.
While the "mincemeat" pie that is
now a tradition on many Christmas -
season menus is now typically a
mixture of dried fruits, chopped nuts,
apples, suet and spices, meat really
was once part of the mix, according
to John Ayto in An A -Z of Food and
Drink.
"Mincemeat originally meant
simply minced meat ... and we do
not have any unequivocal evidence of
its being used in its current sense
until the mid -nineteenth century. But
in the middle Ages and into
Renaissance times and beyond, it was
commonplace to spice up or eke out
meat with dried fruit, and it seems
likely that the earliest mincemeat pies
contained generous measures of
raisins, currants, etc: The reduction in
meat content was a slow but steady
process (still not complete, of course,
for the inclusion of beef suet is a
remnanAt of it.)"

of the Christmas pudding
(aka. plum/figgy pudding), a rich
fruit pudding, was called Frumenty
and was served in Medieval times.
Frumenty was a spiced porridge,
enjoyed by both rich and poor. It has
its origins in a Celtic legend of
harvest god, Dagda, who stirred a
porridge made up of all the good
things of the earth.
The pudding became specifically
associated with Christmas, rather
than merely any festive occasion,
when it was introduced to the Royal
Christmas dinner table by Prince
Albert, German husband of Queen
Victoria who introduced many
German traditions to Britain.
Plum puddings are a very rich,
dark pudding made with all sorts of
dried fruits, nuts, spices, black treacle
and lots sherry or brandy. They are
made well before Christmas as it
takes time for the alcohol to soak into
the dried fruit. They are steamed
when first made, and re -steamed on
Christmas Day before being served
with a sweet white sauce or brandy
butter. According to one tradition, if
the pudding is made at home,
