2 tbsp sliced 1/8 -inch green onions
1/2 tsp salt
1/2 tsp dried dill weed
1/8 tsp pepper
In 2 -quart saucepan bring water to
a full boil. Add carrots. Cover; cook
over medium heat until carrots are
crisply tender (8-10 minutes) Drain;
set aside. In small saucepan melt
butter. Stir in cornstarch until
smooth. Stir in carrots and all
remaining ingredients.
Cook over medium heat, stirring
constantly, until mixture comes to a
full boil (8-10 minutes). Boil, stirring
constantly, 1 minute.
QUICK TORTELLINI SUPPER
2 (9 oz) pkgs fresh tortellini*
1/4 cup butter or margarine
1 cup sliced fresh mushrooms
1 (10 oz) package frozen peas,
thawed
1 1/2 cups (6 oz) shredded cheddar
cheese
salt and pepper
Cook tortellini according to
package directions, drain. In 10 -inch
skillet melt butter; add mushrooms.
Cook over medium heat, stirring
occasionally, until tender (3-5
minutes). Stir in tortellini and peas;
cdntinue cooking until heated through
(3-5 minutes). Stir in 1 cup cheese;
salt and pepper to taste. Sprinkle with
remaining cheese.
* 1 (7 oz) package dried tortellini
or 2 1/2 cups dried medium macaroni
shells can be substituted for fresh
tortellini. Cook according to package
directions; drain.
CUSTARD CREAM WITH
ORANGES AND BANANAS
1/2 cup sugar
2 tbsp cornstarch
2 cups half-and-half
3 egg yolks, slightly beaten
2 tsp vanilla
2 oranges, peeled, sliced 1/4 -inch,
quartered
1 banana, sliced I/4 -inch
1/4 cup flaked coconut, toasted
In 2 -quart saucepan combine sugar
and cornstarch. Gradually stir in half-
and-half. Cook over medium heat,
stirring constantly, until mixture
thickens and comes to a full boil (9-
12 minutes); boil 1 minute.
In small bowl place egg yolks. Stir
1/2 of half-and-half mixture into egg
yolks, then stir egg yolk mixture into
remaining half-and-half mixture.
