The repeat customer is the most
cost-effective customer you have,
Zyvatkauskas said. "Think of ways to
exceed your customers' expectations.
Offer them some little extra thing.
Don't oversell before hand."
Zyvatkauskas discussed a
blueberry operation she'd visited
where the owner kept birds of prey to
drive birds away that would harm the
berries. Every once in a while the
`staff would let the birds loose to
swoop over the berries, creating a
thrilling show for customers at the
same time as they protected the
berries. "It made the day really
fabulous." The same farm had a cafe
that made various blueberry products
so there was not a lot of reason to
have to leave the farm for anything
all day, she said.
Think of your customers needs,
she advised. Christmas tree farms
need to offer saws for those who
don't have one and a binding service
can add value. "Don't assume that
they have the right clothes. rive
them some place to warm up."
"There are certain things you do
for certain ages," she said. If you're
hosting seniors or youngsters the
same bathroom imperative applies.
Seniors also want a place to sit down.
If you're serving food to bus
groups, you need to have enough
room for everyone to eat in one
sitting.
The concept of homemade and
fresh is important for people coming
to the country, she said. "I judge a
farm market by what is offered. If a
farm- market has tomatoes in June, I
figure they are bringing it in from
California." People like local,
organic and seasonal produce.
But dining doesn't have to be high
end, she said. At Curve Lake in
eastern Ontario a local native group
serves buffalo burgers. At Golden
Lake in the Ottawa Valley they serve
what they humorously call "Gold
Lake steak'on a bun" which is really
a slab of cooked baloney on a bun.0
