There's something
fishy in enriched
milk experiment
Researchers at the University of
Guelph are feeding fish meal to
cows in the hope they can provide
milk products that are more
beneficial to the Canadian diet.
Food scientist Art Hill and
masters student Hong Wang are
assessing milk enriched with vital
omega-3 fatty acid for cheese and
other dairy products. They began
by adding fish meal to dairy cattle
feed to boost the animals
consumption of docosahexanoic
acid (DHA). DHA is vital for
infants, nursing mothers and the
aging population because of its
role in brain and retinal develop-
ment and its protective effect
against cardiovascular disease. The
major dietary sources of DHA are
fish and fish oils and it can also be
found in minor amounts in eggs
and some meats. In North Amer-
ica, however, DHA levels in breast
milk are lower than normal due to
low dietary consumption of DHA.
Adding DHA to common foods
can help reverse the shortage.
The cows transferred the DHA
from their diet to the milk which
was processed into cheese. The
researchers worried that the DHA -
enriched cheese would spoil more
quickly because DHA on its own is
less stable than other fats. Hill was
surprised to find out that the DHA -
enriched cheese didn't oxidize any
more quickly than control cheese
in laboratory experiments. The
reason, he discovered, is that DHA
is naturally stabilized when cows
incorporate the fatty acid into fat
globules in their milk.
What's more, "Taste panelists
actually preferred the flavour and
texture of the DHA cheese," Hill
says.
Hill's research team has also
looked at the processing qualities
of DHA -enriched milk for the
production of butter and possibly
ice cream.0
