fine mesh nylon sieve into
microwaveable deep bowl, covering
with plate and weighing down with
heavy can.
Stir 2 tbsp (25 mL) lemon juice
and 1 cup (250 mL) granulated sugar
into strawberry juice. Microwave at
High for 5 min. or until bubbly.
Strain through dampened muslin
lined sieve into clean bowl. Pour into
sterilized bottle and seal. Store in
refrigerator for up to 3 weeks or
freeze for longer storage.
To serve pour 2 tbsp to 1/4 cup
(25 to 50 mL) in glass. Fill with
sparkling water. Add ice cubes and
garnish with a plump fresh
strawberry if desired.
SUGAR FREE STRAWBERRY
SPREAD WITH LIGHT PECTIN
3 cups (750 mL) strawberries,
mashed
4 tsp (20 mL) lemon juice
1 pkg (49 g) light fruit pectin
crystals
12 pkg low calorie sweetener (1
tbsp/15 mL) each or to taste
In large saucepan, combine
strawberries and lemon juice; stir in
pectin crystals. Bring to boil over High
heat, stirring. Boil hard, stirring
constantly for one min. Remove from
heat; stir in sweetener. Stir for 5
minutes, skimming off any foam. Pour
into clean jars or containers with tight-
fitting lids, leaving 1/2 inch (1 cm)
headspace. Seal and let cool. Label and
store for up to one week in refrigerator
or up to one year in freezer.
STRAWBERRY COLADA
CHEESECAKE
Crust:
11/2 cups (375 mL) graham crumbs
1/4 ctip (50 mL) butter, melted
1 tbsp (15 mL) water
Stir crumbs with butter and water
until evenly moistened. Press onto
bottom of 9 inch (23 cm) springform
pan, creating slight upward slope at
side. Bake in 350°F (180°C) oven for
10 minutes. Set aside to cool.
Cheesecake:
2 pkg (each 8 oz/250 g) cream
cheese, at room temperature
1/2 cup (125 mL) granulated sugar
3 eggs
2 tbsp (25 mL) lemon juice
1 tsp (5 mL) almond extract
1/2 tsp (2 mL) vanilla
In large bowl and using electric
mixer, beat cream cheese until
smooth. Beat in sugar until well
blended. Beat in eggs, one at a time,
beating well after each addition. Beat
in lemon juice, almond extract and
vanilla. Pour over crust. Bake at
350°F (180°C) oven just until set and
golden brown around edge, 35 to 45
minutes. Run knife around edge of
cake. Refrigerate for at least 2 hour'
or until chilled.
Strawberry topping:
2 tbsp (25 mL) each granulated
sugar, lime juice, rum and
shredded coconut
3 cups (750 mL) sliced
strawberries
In bowl, combine sugar, lime
juice, rum and coconut; stir in sliced
strawberries. Let stand at room
temperature for one hour to blend
flavours. Spoon over wedges of
cheesecake.
STRAWBERRY CREAM
DESSERT
2 cups (500 mL) strawberries,
sliced in half
1 envelope unflavoured gelatin
1 cup (250 mL) milk
2 tubs (each 175 g) of French
vanilla yogurt
2 tbsp (25 mL) granulated sugar
In blender or food processor,
puree strawberries until smooth; set
aside.
In saucepan, sprinkle gelatin over
rpilk; let soften for one minute. Heat
on low heat until gelatin is
completely dissolved. Stir in pureed
strawberries, yogurt and sugar. Pour
into 6 dessert dishes, refrigerate for
about one hour, or until chilled
Garnish with sliced strawberries.

beasts (about 1 1/2 lbs/750 g)
2 tbsp (25 mL) butter
