If you don't have a backyard patch of rhubarb, you can pick up some in the produce department of grocery stores when in season or you can look for a mess at the farmer's market. Aleta's Pucker Pie Prepare and roll out your favorite pie crust pastry for a 10" double - crusted deep dish pie. (My grandmother made her own snowy white lard and her pie crusts were exceptionally light and flaky.) Fit bottom crust into pie plate. For filling, mix together 6 tablespoons cornstarch and 1 cup of sugar (more or less to suit taste). Grandmother never had much sugar to spare, so her pies were always mouthwateringly tart and this is how I still like mine today! Blend inbeaten yolks of 2 or 3 eggs depending on size. We had our own eggs on the farm so Grandmother did not need to skimp on these. Add 5 cups of rhubarb that has been skinned (the membranous sheaths peeled off and discarded) and sliced into small pieces about the size of soup: celery. Pour filling into crust. Dust with cinnamon and dot with butter. Cover with top crust, flute and prick. Bake at 425F for 15 minutes. Reduce heat and bake 350F for about 30 minutes longer. My Grandmother baked her pies in a wood stove oven that was heated "just so" until they were fragrant and golden. Serve hot or cold drizzled with a spoon of fresh sweet cream. Or with whipped or ice cream. Also good with a wedge of sharp cheddar. Variations: Strawberry Pucker Pie: In earlier parts of summer when strawberries are in season, replace I cup of the rhubarb with 1 cup of sliced strawberries. Raspberry Pucker Pie: When raspberries come into season in later parts of the summer, replace 1 cup of the rhubarb with I cup of raspberries.
