"Men are very adis- appointed if .the plate put before them doesn't show potatoes in some form!" At a second famous hotel the director of foods and beverages stated firmly: "The healthy man who eats as he likes is sure to ask for potatoes!" • "We have a hundred different ways of doing potatoes." explained a third. "Not all these potato dish- es are suitable for service at very large luncheons because athey are a bit too complicated or must be prepared the last minute, but in general the potato is very impor, tant in the menu of the hotel din ing ,room." The potato is a goad mixer. Its mealy blandness contrasts appe- tizingly with browned meats and other vegetables from asparagus to zucchini. Potatoes have a wealth of nutrients and it is possible to stay healthy for months on pota- toes alone plus a small amount of fat. But because it has a neglig- ible amount of fat—one part in a thousand --it isn't "rich". This is why its caloric value is surprisingly low, only 97 per medium baked po- tato. This is why, also, it teams so wonderfully with lots of butter or a well of good brothy gravy .. . for those who don't watch calories. Pour bacon drippings over the top. Bake in pre -heated moderate oven (350 degrees F.) 35 minutes or un- til potatoes are tender and cheese has browned. Serve as a main dish for lunch or supper with ru'isp ba. con. Potato and Beat Ball Oven Stew 12 -oz. can corned beef 1 lb, ground beef 14 cup fine dry bread crumbs 2 tablespoons cold water 1 cup finely chopped onion !_ teaspoon salt li teaspoon ground black pepper ' i. teaspoon garlic powder 4 medium potatoes 2 cups onion rings 1 cup boiling water 1 teaspoon salt Li teaspoon ground black pepper 3 tablespoons flour 2 tablespoons cold water Shred corned beef with a fork, and mix with gr'oun'd beef, bread crumbs, 2 tablespoons water, on - on, the ' teaspoon salt, 't tea- spoon black pepper and garlic pow- der. Shape into 2 -inch balls and brown on all sides in shortening of beef suet. Place in a 2 -quart cas. serole. Peel and cut potatoes in eights and add along with onion rings, the 1 cup water and remain. ing seasonings. Blend flour with cold water and mix with the meat and potato mixture. Here it is shown served with the recipe fora creamy, rich Hol. fandaise Sauce, To make the sauce, thoroughly beat 3 egg yolks in a bowl small enough to fit closely on a double boiler base. Very slowly add 1A cup melted butter, beating constant- ly. Then beat in 1 tablespoon lemon juice. Place bowl over simmering, not boiling water. Stir constantly with a spoon until mixture thickens --4 to 5 minutes, Remove from heat. Pour over cooked, drained asparagus. Mikes about % cup.
