.banana Refrigerator Pudding
The world's banana boats are
sailing faster than ever, delivering
some 30 billion bananas to banana -
eaters all over the globe. Bananas
consumed in North America come
from Latin America, from as far
south as Brazil. Head and shoul-
ders above all other banana grow-
ers is Ecuador.
The botanical name for banana
is "Musa sapientum" or "fruit of
the wise men" and is said to have
originated as a result of a legend
that the sages of India reposed in
its shade and refreshed themselves
with its fruit. Today we might bet-
ter call it "the fruit of the doctors"
for medical men and nutritionists
are finding more and more health
reasons for eating bananas,

all my teeth taken out and a new
stove and refrigerator put in!"
Banana Refrigerator
Pudding
3 eggs
1i4 teaspoon salt
1/4 cup sugar
2 cups milk
112 teaspoons pure vanilla ex-
tract
1/4 Ib, box vanilla wafers Cap.

cup heavy cream
1 tablespoon sugar.
Beat egg lightly and blend with
salt, sugar and nmilk. Stir and cook
over very low heat or hot water
(not boiling) until mixture coats
a metal spoon. Remove from heat,
add pure• vanilla extract and cool.
Arrange the vanilla wafers, over-
lapping over the bottom of a. 63x6
x21r_ inch serving bowl. Top with
a layer of sliced bananas, cut 1/4
inch thick. Pour in a layer of cus-
tard. Repeat using remaining wa-
fers, bananas and custard, having
custard as top layer. Cover. Place
in refrigerator overnight or 6 to 8
hours. Just before serving whip

Banana Custard Pie
2 whole eggs
3 egg yolks
?_ cup sugar
1:, teaspoon salt
212 cups milk
11:; teaspoons pure vanilla extract
9 -inch unbaked pie shell
2 bananas
meringue
Beat whole eggs with egg yolks.
Add sugar, salt and !i cup of the
milk. Heat remaining milk and
gradually add to egg mixture along
with pure vanilla extract. Pour
into a 9 -inch pie pan, lined 'with
unbaked pastry rolled 4 -inch
thick, Bake in a pre -heated, very
hot oven (450 degrees F.) 10 min-
utes. Reduce heat to moderate
(350 degrees F.) and bake 25 to 30
minutes or until a knife inserted
in centre comes out clean: Re-
move from oven and top w•itli slic-
ed banans. Cover with meringue
and bake in preheated slow oven
(325 degrees F.) 15 minutes.

Add salt to egg whites and beat
until they stand in stiff, soft peaks.
Gradually beat in sugar. Beat in
pure vanilla extract. Spread over

Banana Cream Dessert

2 cups (about 8 medium) mashed
banans
It cup fresh orange juice
2 tablespoons fresh lemon; juice
?s teaspoon salt
1 teaspoon ground ginger
1 teaspoon rum extract -
1 cup heavy cream, whipped
Combine sugar, bananas, orange
juice, lemon juice, salt, ginger ,and
rum extract. Fold in creham.
Turn into a freezer and freeze un-
til mushy. Turn into bowl and
beat with an electric or rotary
beater until fluffy. Return to tray
and freeze until firm and ready to'
serve.

(Makes 5-6 servings) ...•
1 cups (large can) undiluted
evaporated milk
2 cups (8 ounces) grated Ched-
dar cheese
•L teaspoon salt
1 teaspoon paprika
1?2 teaspoons dry mustard
1 teaspoon grated onion
5 egg yolks '
2 tablespoons all-purpose flour
5 egg whites
teaspoon cream of. tartar
Simmer evaporated mills in 112
quart saucepan over low heat to
just below boiling (2-3 minutes).
Ada cheese, salt, paprika, mustard
and onion. Stirr over low heat un.
fit cheese melts (2-3 minutes long-
er). Beat egg yolks with a fork
until slightly thick. Add flour. Mix

of hot cheese sauce to yolks. mix
Well. Slowly return to cheese•
sauce, stirring constantly. Cook
over low heat about 2 minutes un-
til sauce thickens, stirring con-
stantly, Beat egg whites and cream
of tartar in large mixing bowl,- un-
til whites stand in stiff .peaks.
Gently fold cheese' mixture' into
egg whites. Pour into 2 -quart caste
serole which is buttered on,bot-
tone. Place a high collar of •alum-•
inunt foil around casserole; tie
tightly with a string. Bake in a
pan of liot water in moderate ov-
en (350 degrees) for 50 minutes:
Remove foil and bake 10 minutes
longer or until golden brown and
knife inserted in centre comes out
clean. Serve at once,

or attic, a recreation room or a new
addition, now have a good oppor-
tunity to do something about it.
The solution—supplementary el-
ectric heating—will be headlined
throughout Ontario January 29 to
,March 10 with the theme, "Make
Your Home Complete ete

Heat". Municipal electric utilities,
contractors, manufacturers, distrib-
utors`� and Ontario Hydrdo are
working in close co-operation to
help 'homeowners use electric heat
to solve their particular heating
problem.
The,campaign is timed to lend
support to government-sponsored
"do it now" winter work programs.
Advantages of supplementary
electric heating and the "do it now"
aspect will be emphasized in the
campaign throughout the province,
Inquiries will be directed to elec-
trical, contractors, and up-to-date
listings. of qualified electric heating
contractors aro available in all
municipal utilities and Ontario
Hydro offices.
Residential and farm customers
of Ontario Hydro will be encour-
aged to add supplementary electric
heating, to their homes by means
of a time payment wiring plan in-
troduced Jan, 1. A number of mu-
nicipal utilities also have wiring
finance plans to assist their cus-
tomers in modernizing home wir-
