Wassail, an old Anglo-Sexon
toast meaning to -be well or whole,
was originally a pkelge drunk be-
tween close comrades. But for some
1500 years, wassail has. been the
festive drink of the Yule. In the
time of King Henry VII it was a
simple brew of ale, heated with
sugar, nutmeg and roasted apples,
and shared between king and com-
moner alike, However, in those
days farmer and country folk did
not always drink their wassail, but
sometime during the Christmas
season, family and servants gath-
ered in the orchard aroend the
best apple tree and sang:
Here's to thee, old apple tree,
Whence thou may'et bud, and
then mayst blow!
And whence thou mayst bear ap-
ples enow!
Hats full! Caps full!
Bushel, bushel sacks full!
And my pockets full, too, Mena!
, After which they poured the was-
sail around the tree to ensure a
productive year for apples.

Around the nineteenth century
the mistress of the -house took it on
herself to make egg nogs for the
festive drink and this she did, and
still does with great care and pride.
Today, Wass Had or Good Health
said to the clinking of cups, is
still the -toast of English-speakng
homes arid wassail is still the fes-
tive drink served in their -homes on
Christmas eve to carolers and .call-
ers who drop in and out,
Wassails may be egg nogs, hot or
cold punches of apple juice or
gingerale or heady hot brews for
eider, ale or other such beverages,
depending on taste and creed. Was-
sails may be served from a silver
bowl decorated with holly, or from
a kitchen pitcher, Regardless of
ingredients and vessel used, the
main elements of a good wassail
are laughter, song and cheer.

PLAIN WASSAIL
10 cups apple juice
15 whole cloves
sticks cinnamon (each 2 to 21a
inches long)
14 teaepdon nutmeg
2 to 3 tablespoons sugar
2 lemons
Put apple juice, spices and sugar
in a saucepan, Peel lemons thinly,
then cut into slices. Add peel and
slices to saucepan. Bring to a boil.
Reduce heat, cover 'and simmer
for 15 minutes. Strain through mus-
lin or cheesecloth. Serve, hot, or
chill and serve cold, Makes about
9 cups-16 to 18 servings.

Christmas eve will delight in St.
Nick's Wassail with its refreshing
and different flavor,
St. Nick's Wassail
6 eggs
2 teaspoons sugar
l,4 teaspoon salt
2 cups milk
2 cups apple juice
le to 2 /3 cup whipping cream,
1 teaspoon vanilla
Nutmeg-
Beat eggs, add sugar and salt and
combine thoroughly. Stir in milk,
then gradually stir in apple juice.
Add whipping cream (unwhipped)
and vanilla. Strain and chill thor-
oughly. Pour into glasses and
sprinkle lightly with nutmeg. Will
make about 6 cups.
Note: If desired the whipping
cream may be omitted but the Was-
sail will not be so rich.

Yule Eggnog
6 eggs
11 cup sugar
le teaspoon salt
4 cups milk
1 teaspoon vanilla
Ile to 2 teaspoons rum flavoring
2 tablespoons sugar
la, cup whipping cream, whipped
Nutmeg
Separate 2 of the eggs. To the 2
yolks add the remaining 4 eggs
and beat slightly. Add the cup
sugar and salt; then blend thor-
oughly, Gradually stir in milk, then
strain. Stir in vanilla •and rum fla-
voring. Beat the 2 egg whites till
soft peaks form, then gradually
heat in the remaining 2 tablespoons
of eugar. Add to milk mixture and
combine well. Chill thoroughly.
Just before serving stir well, then
pour into chilled punch bowl. pot
with "islands" of whipped cream
and sprinkle lightly with nutmeg.
Makes about 7 cups.
A Christmas salad is a very Me,
portant and special part of the
menu. It must acid a bit of 'glitter
and color -to the table, or -buffet, It
must be neat-as-a-pin on a plate
by itself or on individual side
plates. It must be marvelous to
eat and .above all prepared the
day before serving.
May we also remind, you, that
just before you unraold tae salad
moisten the top of the salad and
the plate It is to grace. This will
enable you to centre the salad on
the plate without, spoiling its
shape.
Red Apple ,Inice Mold
2 cups cranberries
2 1,, cups apple juice
2 tablespoons gelatine
la cup sugar.
Few grains salt
Combine cranberries and 1 cup
apple juice, bring to boil and cook
gently foe -5 minutes or until the
cranberries are soft. Meanwhile,
soak gelatine in -half cup apple
juice for 5 minutes, Press cran-
berries through sieve, To sieved.
cranberries add remaining cup of
apple juice; sugar and salt and heat
to a boil. Add soaked gelatine and
-stir until dissolved, Pour into a
ring mold or into 6 to 8 individual
molds. Chill until firm. Six servings
when served as a side salad, or 8 to
10 servings when served as a relish,

Christmas Marble Salad
6 oz. plain or cream cheese.
2 packages lemon-flavored jelly
powder
le cup red cinnamon candies
2 cups boiling water
2 cups unsweetened apple sauce
2 tablespoons lemon juice
cup' milk or light cream
3 tablespoons salad dressing
le cup broken walnuts
R cup whipping cream, whipped
10 to 12 red cinnamon candies
Leave cream cheese at room
-temperature ,,t13 soften, Dissolve
gelatine eted candies" in boiling -Wa-
ter. Stie in apple sauce and lemon
juice. Chill until partially .Stir
in nuts. Turn into a ring mold or
an 8x8x2 inch pan. Cream the
cheese with. a fork,, -then blend: in
milk or cream and salad (Messing.
Drop by spoonfuls on top of gela-
tine mixture then, using a fork,
swirl through mixture to give a
marbled effect. Chill until firm,
Unmolrd; garnish with spoonfuls of
whipped cream and top each with
a cinnamon candy. Ten to twelve
servings,
